Key Ingredients for a Perfectly Balanced Salad

Crafting a truly exceptional salad starts with quality ingredients. Here’s a closer look at what makes this vegan roasted beet kale salad so special, along with insightful tips for variations to keep things exciting.

An array of fresh and prepared ingredients for a kale and beet salad, neatly arranged in bowls and containers, including chickpeas, beets, kale, corn, pumpkin seeds, and carrots.
Fresh, vibrant ingredients are the heart of this delicious and healthy salad.
  • Chickpeas (Garbanzo Beans): These legumes are the star of our protein-packed marinated chickpeas, offering a fantastic texture and a savory burst of flavor. While you can certainly use plain, canned chickpeas for convenience, we highly recommend following our recipe for the marinated version to elevate the salad’s overall taste profile. For another delicious twist, you could also prepare the roasted chickpeas from our Vegan Farro Bowl recipe.
  • Beets: For this recipe, you’ll need approximately one medium-sized whole beet per serving. Roasting them brings out their natural sweetness and tenderness, transforming their earthy notes into something truly sublime. To add visual interest and a slightly different flavor, consider using roasted golden beets as a delightful variation.
  • Kale: As the leafy green base, any variety of fresh kale works wonderfully. Its sturdy texture holds up well to the dressing and other ingredients. If kale isn’t your preference, feel free to substitute with other nutrient-dense greens like fresh spinach, a mixed greens blend, peppery arugula, or even vibrant Swiss chard.
  • Corn: Whether you opt for fresh corn cut straight from the cob, convenient canned corn (drained), or thawed frozen corn, it adds a lovely sweetness and a cheerful pop of color. For an extra layer of flavor, try roasting the corn slightly before adding it to the salad, which brings out its natural sugars and adds a smoky nuance.
  • Pepitas (Raw Pumpkin Seeds): These provide a fantastic crunch and a boost of healthy fats. They toast lightly during assembly, enhancing their nutty flavor. If pepitas aren’t available or you prefer other options, feel free to swap them for crunchy pecans, earthy walnuts, sliced almonds, or nutrient-rich sunflower seeds.
  • Carrots: Roasted whole carrots become incredibly sweet and tender, offering a delightful contrast to the other textures. They are a staple of this wholesome salad. For a different autumnal flavor, you can substitute carrots with roasted sweet potatoes, parsnips, butternut squash, acorn squash, or even rutabaga.
  • Balsamic Dressing: Our tangy balsamic vinaigrette ties all the flavors together beautifully. However, don’t limit yourself to just one dressing! For a rich and creamy alternative, experiment with a maple tahini dressing or a savory miso tahini dressing to completely transform the salad’s profile.

Simple Step-by-Step Guide to Prepare Your Salad

Creating this delicious vegan roasted beet kale salad is straightforward. Follow these steps for a perfectly balanced and flavorful dish.

Step 1: Prepare the Marinated Chickpeas for Maximum Flavor.

The secret to incredibly flavorful chickpeas lies in allowing them ample time to marinate. Begin by combining all the ingredients for the marinated chickpeas in a container or bowl. Mix them thoroughly to ensure every chickpea is coated with the aromatic blend of herbs, oil, and vinegar. Once mixed, cover the container and refrigerate for at least a few hours. For the best possible flavor, we highly recommend preparing them overnight or even up to a couple of days in advance. The longer they marinate, the deeper and more robust their taste will become.

Marinating chickpeas infuses them with rich, herbaceous flavors, making them a highlight of the salad.

Step 2: Master the Art of Roasting Beets and Carrots.

Roasting these root vegetables brings out their natural sweetness and creates a wonderfully tender texture.

For the Beets: Start by giving your beets a good scrub under running water to remove any dirt; there’s no need to peel them at this stage. Drizzle each beet with a couple of drops of olive or avocado oil, then individually wrap them tightly in aluminum foil. Place the foil-wrapped beets on a baking tray. Roast them in a preheated oven for 40-60 minutes, or until they are fork-tender. Once roasted, allow them to cool slightly inside their foil packets until they are comfortable enough to handle. The skin will then peel off effortlessly. Trim off the ends and chop the cooked beets into bite-sized pieces for your salad.

Wrapping beets in foil ensures even roasting and easy peeling for a tender, sweet result.

For the Carrots: While the beets are roasting, prepare the carrots. Drizzle them with a few drops of olive oil, then season generously with salt and black pepper. Place them on the same baking tray as the beets, ensuring they have a little space. Continue roasting until the carrots are very tender and their edges begin to brown and slightly caramelize, often showing small bubbles. This caramelization intensifies their sweetness and adds depth of flavor.

Step 3: Whisk Up the Tangy Balsamic Vinaigrette.

While your vegetables are roasting, it’s the perfect time to prepare your dressing. Combine all the balsamic vinaigrette ingredients in a small jar with a tight-fitting lid or a bowl. Shake vigorously or whisk thoroughly until all ingredients are well combined and emulsified. Before drizzling over your salad, give the dressing another quick shake or stir, as the oil and vinegar may separate slightly upon standing.

Step 4: Prepare the Kale by Massaging for Tenderness.

Raw kale can sometimes be tough, but a simple massage makes it incredibly tender and more palatable. Place your finely chopped kale in a large mixing bowl. Add a squeeze of fresh lemon juice and a few drops of olive oil (or a small spoonful of your prepared balsamic dressing). Using clean hands, gently massage the kale for about 60 seconds. You’ll notice the kale leaves darken slightly and soften significantly, becoming much more pleasant to eat. This step is crucial for an enjoyable kale salad experience.

Step 5: Assemble Your Magnificent Salad.

With all your components ready, it’s time to bring your salad to life! Divide the massaged kale evenly among your serving bowls, plates, or meal prep containers. Artfully arrange the peeled and sliced roasted beets, the vibrant corn, the crunchy pepitas, and the tender roasted carrots on top of the kale. For the carrots, you have the option to add them whole, as their tenderness will allow them to be easily sliced with a fork while eating, or you can chop them into smaller pieces before adding to the salads, depending on your preference. Finally, generously drizzle each salad with the prepared balsamic vinaigrette. Serve immediately to enjoy the freshest flavors and textures.

Expert Tips for a Perfect Vegan Beet Kale Salad

Elevate your salad game with these helpful tips to ensure your vegan roasted beet kale salad is always a hit:

  • Don’t Rush the Marinating: While the marinated chickpeas can be ready in an hour, letting them soak in the flavorful dressing for a full overnight period or even longer (up to 2-3 days in the fridge) significantly deepens their savory, herbaceous taste. This pre-planning step truly enhances the overall salad experience.
  • Massaging Kale is Key: Never skip the kale massaging step! Raw kale can be quite fibrous and tough. A quick massage with lemon juice and a little oil breaks down the cell walls, making it remarkably tender, easier to chew, and more palatable, without compromising its nutritional value.
  • Perfectly Roasted Vegetables: For truly sweet and tender beets and carrots, ensure your oven is preheated to the correct temperature. Roasting times can vary based on the size of your vegetables; smaller ones will cook faster. Test for tenderness by piercing with a fork. Slight caramelization on the carrots indicates optimal flavor development.
  • Make Dressing Ahead: The balsamic vinaigrette can be prepared days in advance and stored in the refrigerator. This saves valuable time on the day of assembly. Just remember to give it a good shake or whisk before serving, as the ingredients tend to separate.
  • Customize with Grains and Proteins: To make this salad even more filling, consider adding a cooked whole grain like quinoa, farro, brown rice, or even a sprinkle of toasted nuts or seeds beyond pepitas. Grilled or roasted tofu/tempeh could also be a great addition if you desire more protein.
  • Layering for Freshness: If you’re meal prepping, layer your salad ingredients carefully. Place the dressing at the very bottom, followed by the heartier roasted vegetables and chickpeas, and then the kale and corn on top. This prevents the greens from getting soggy, allowing you to dress the salad just before eating.

Storing and Meal Prepping Your Salad

This salad is fantastic for both immediate enjoyment and future meals with a little planning.

  • Fridge Storage: Store any leftover assembled salad in a sealed airtight container in the refrigerator for up to 3 days. While the kale holds up reasonably well, it’s always best when dressed fresh.
  • Meal Prep Perfection: This recipe lends itself beautifully to meal preparation. Wash, chop, and store your kale separately. Prepare the roasted carrots and beets, make the marinated chickpeas, and whisk together the balsamic vinaigrette all in advance. Store each component in separate containers in the fridge. When you’re ready to eat, simply assemble the salad by combining the components and adding the dressing just before serving. This approach ensures maximum freshness and prevents your greens from becoming soggy.

This beautiful roasted beet salad is full of flavor, texture, and nutrition. It’s vegan and gluten-free, high in fiber and nutrients, making it just as healthy as it is delicious. A perfect hearty salad for fall and winter.

Prep: 30 mins

Cook: 45 mins

Total: 1 hr 15 mins

Servings: 4

Ingredients

For the Marinated Chickpeas

  • 19 oz can of chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • 2 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • Optional: 1/4 tsp chili flakes

For the Balsamic Vinaigrette

  • 3 tablespoons balsamic vinegar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons extra virgin olive oil or avocado oil
  • 1 tablespoon dijon mustard
  • 1 1/2 tablespoons pure maple syrup
  • 1/2 teaspoon sea salt
  • 1/2 tsp black pepper
  • 2 cloves garlic, minced

For the Salad

  • 4 medium-sized beets
  • 8 small to medium carrots
  • 6 cups finely chopped fresh kale
  • 1 cup fresh, frozen and thawed, or canned corn
  • 4-8 tbsp raw pepitas (pumpkin seeds), 1-2 tbsp per salad

Instructions

  1. Prepare Marinated Chickpeas: Combine all marinated chickpea ingredients in a bowl or container, mix well, cover, and refrigerate for a minimum of 1 hour, or preferably overnight for deeper flavor.
  2. Preheat Oven & Prep Vegetables: Preheat your oven to 425°F (220°C). Give beets and carrots a quick wash and scrub (leaving skins on). Rub each with a few drops of olive or avocado oil.
  3. Roast Beets: Wrap each beet individually in foil and place on a parchment-paper lined baking tray. Roast for 40-60 minutes, or until easily pierced with a fork. Once tender, remove from oven, open foil, and let cool for 15-20 minutes until handleable. Peel skins, trim ends, and chop for the salad.
  4. Roast Carrots: Place carrots on the same baking tray as beets. Sprinkle with salt and pepper. Roast until very tender and starting to bubble and brown, about 30-40 minutes (depending on size). Once roasted, you can chop them or serve them whole; they will be tender enough to slice with a fork.
  5. Make Balsamic Vinaigrette: While vegetables roast, whisk or shake together all balsamic vinaigrette ingredients until combined. Remember to mix again before serving as oil may separate.
  6. Massage Kale: Remove kale leaves from thick stems and chop into small pieces. Place in a large mixing bowl. Add a squeeze of lemon juice and a few drops of olive or avocado oil (or a small amount of the balsamic dressing). Massage the kale with your hands for 1-2 minutes until softened.
  7. Assemble Salad: Divide the massaged kale between 4 bowls, plates, or food storage containers. Evenly distribute the chopped beets, carrots, corn, marinated chickpeas, and pepitas among the portions. Top each salad with equal amounts of the balsamic vinaigrette. Serve immediately.

Notes

You’ll need about 15 minutes of hands-on prep time for the vegetables, plus an additional 15-20 minutes to allow the roasted beets to cool enough for easy peeling. An alternative is to peel the beets before roasting; this way, once roasted, you can slice and add them directly to the salad without cooling time.
