Essential Ingredients for Your Vegan Monkey Bread

Crafting the perfect vegan monkey bread starts with selecting the right high-quality ingredients. Below is a detailed look at the key components, their roles in the recipe, and potential substitutions to ensure your baking success and cater to various dietary needs.
- **Vegan Butter:** You’ll need a good quality vegan butter, both melted for the dough and for the sumptuous cinnamon sugar coating. It provides the essential rich, buttery flavor and density that makes this bread so irresistible, mimicking traditional versions flawlessly. Brands like Earth Balance, Miyoko’s Kitchen, or Melt Organic work exceptionally well. If you are not vegan, regular unsalted dairy butter can be used as a direct substitute.
- **Non-Dairy Milk:** Warm dairy-free milk is crucial for activating the yeast, enabling the dough to rise beautifully, and achieving a tender crumb. It’s also used to create the smooth, pourable glaze. Unsweetened cashew milk is a fantastic choice due to its creamy consistency, but almond milk, oat milk, or soy milk are equally effective alternatives. Ensure the milk is warmed to a pleasant temperature (around 105-115°F or 40-46°C) to properly activate the yeast without being too hot to kill it.
- **Cane Sugar (Granulated Sugar):** This natural sweetener is used in the dough to feed the yeast and add a subtle sweetness, as well as in the cinnamon-sugar coating. When purchasing, always check the brand to ensure it is vegan-friendly, as some granulated sugars are processed using bone char. Organic cane sugar is typically a safe vegan choice. Regular white granulated sugar can be substituted if you verify its vegan status.
- **Quick Rise Yeast:** This type of yeast, also known as instant yeast, is a baking game-changer as it significantly cuts down on the time required for the dough to rise. This means you get to enjoy your monkey bread sooner! Always check the expiration date on your yeast to ensure it’s fresh and active, guaranteeing a light and airy texture.
- **Brown Sugar & Cane Sugar (for Coating):** The combination of these two sugars forms the incredibly sweet, sticky, and caramelized coating that defines monkey bread. Brown sugar contributes a deeper, molasses-like flavor and additional moisture, leading to a gooier result. Cane sugar adds a delightful crystalline texture. Brown sugar can be substituted with coconut sugar, demerara sugar, turbinado, or golden raw cane sugar for a similar rich flavor profile.
- **Ground Cinnamon:** The aromatic heart of monkey bread! High-quality ground cinnamon is essential for the fragrant, warm spice that permeates every piece of this pull-apart delight. You’ll use it generously in the sugar coating.
- **All-Purpose Unbleached Flour:** The primary structural component of your dough. Sifting the flour before use helps to remove lumps and aerate it, contributing to a lighter, softer dough. While all-purpose is versatile, you can experiment with a small percentage of bread flour for a chewier texture.
- **Salt:** A critical ingredient that enhances the overall flavor of the bread, balancing the sweetness and controlling the yeast’s activity for a perfect rise.
- **Icing Sugar (Powdered Sugar):** This finely milled sugar forms the base for the sweet, drizzly glaze that crowns your baked monkey bread. As with other sugars, if you’re strictly vegan, look for organic powdered sugar or verify the brand’s processing methods, as some may use bone char. For a unique alternative, you could drizzle vegan caramel sauce instead of the powdered sugar icing. Adding 1-2 teaspoons of vanilla extract to the glaze will create a fragrant vanilla icing.
Step-by-Step Guide to Baking Vegan Monkey Bread
Before You Start: Thoroughly grease your bundt pan with non-stick cooking spray, a light coating of oil, or melted vegan butter. Ensure every crevice and the center tube are completely covered to prevent any sticking once the caramelized sugar sets. Set the prepared pan aside.

Step 1: Activate the Yeast Mixture
In a small mixing bowl, combine the **melted vegan butter**, **warmed non-dairy milk**, **cane sugar**, and **quick-rise yeast**. Stir gently with a spoon until all ingredients are well incorporated. Set this mixture aside for 5-10 minutes. During this time, the yeast should become active, forming a foamy layer on top. This crucial step confirms your yeast is alive and ready to make your bread light and airy.

Step 2: Prepare the Dough Base
In a medium-sized mixing bowl, whisk together the sifted all-purpose flour and salt. Create a visible “well” or depression in the center of the dry ingredients. Carefully pour the activated yeast mixture from Step 1 into this well. Using a wooden spoon or a sturdy spatula, slowly begin to incorporate the flour from the inner edges of the well into the liquid. Continue mixing until the ingredients are almost fully combined, and a shaggy, somewhat sticky dough begins to form. This initial mixing can also be done directly on a lightly floured countertop if you prefer to knead there.

Step 3: Knead and First Rise
If not already on your counter, transfer the dough mixture onto a lightly floured surface. Begin to knead the dough vigorously for approximately 3-5 minutes. Continue kneading until a smooth, elastic ball has formed and the dough feels “silky” to the touch. Avoid adding excessive flour, as this can make your monkey bread tough. Once kneaded, lightly grease a large, clean mixing bowl, place the dough ball inside, and turn it once to coat. Cover the bowl with a clean tea towel or plastic wrap. Place the bowl in a warm, draft-free area in your kitchen and allow the dough to rest and double in size, typically around 1 hour. A warm, turned-off oven (with the light on) can create an ideal environment.

Step 4: Prepare the Cinnamon Sugar Coating
While your dough is undergoing its essential first rise, prepare the irresistible cinnamon sugar coating. In a small bowl, thoroughly mix together the brown sugar, cane sugar, and ground cinnamon until fully combined and fragrant. In a separate small bowl, melt the remaining vegan butter, ready for dipping. Set both bowls aside; this preparation step ensures a smooth and efficient process once the dough is ready to be portioned and coated.

Step 5: Roll and Cut the Dough
Once the dough has successfully doubled in size after its first rise, gently punch it down to release the accumulated air. Transfer the dough to a lightly floured surface. Using a rolling pin, carefully roll the dough out evenly into an 8-inch by 8-inch square. Strive for a consistent thickness across the entire square, as this will help ensure that all the individual pieces bake uniformly.

Step 6: Shape the Dough Balls
Using a sharp knife or a pastry cutter, meticulously cut the 8-inch square of dough into approximately 64 small, 1-inch by 1-inch square pieces. Precision here helps ensure even baking. Take each small square piece of dough and gently roll it between your palms to form a smooth, uniform ball. This creates the signature individual “pull-apart” segments of your monkey bread. Keep them covered with a tea towel while you work to prevent drying.

Step 7: Coat the Dough Balls
This is where the magic truly begins! One by one, take each carefully rolled dough ball. First, dip it completely into the bowl of melted vegan butter, ensuring it’s fully coated. Allow any excess butter to drip back into the bowl to avoid a soggy result. Immediately after, roll the buttered dough ball in the cinnamon-sugar mixture, pressing gently to ensure an even and generous coating on all sides. This double coating creates the irresistible sticky, sweet exterior that monkey bread is famous for.

Step 8: Arrange and Second Rise
As you coat each dough ball, meticulously place it into your already greased bundt pan. Arrange them in layers, building upwards in a circular motion, ensuring they are somewhat evenly distributed but not overly packed. Don’t press them down too firmly, as they need space to rise. Once all the dough balls are in the bundt pan, cover it snugly with plastic wrap or a clean tea towel. Return the pan to a warm, draft-free spot in your kitchen and allow the dough to undergo a second rise for an additional hour. This second rise is absolutely crucial for achieving that light, fluffy, and wonderfully tender texture in the final baked bread.
Preheat the Oven: Approximately 15-20 minutes before the second rising time is complete, preheat your oven to 350°F (175°C). This ensures the oven is at the correct temperature and fully heated when your bread is ready to bake, preventing any temperature fluctuations that could impact the rise and texture.
Step 9: Bake to Golden Perfection
Once the dough has completed its second rise and your oven is preheated, carefully place the bundt pan into the center of the oven. **Bake the monkey bread for 35-40 minutes.** The bread is ready when the top is beautifully golden brown, and the internal temperature reaches approximately 200-210°F (93-99°C) (measured with an instant-read thermometer). A good visual cue is a puffy, crispy top. It will smell incredibly fragrant! To check for doneness, relying on color and puffiness is usually sufficient, as a toothpick might be sticky due to the caramelized sugar.
Carefully remove the baked monkey bread from the oven. This next step is critical: allow it to **rest in the bundt pan for exactly 5 minutes**. This brief resting period allows the bread to set slightly and the caramelized sugar to loosen from the pan. Any longer, and the sugar mixture could harden and stubbornly stick to the pan, making it incredibly difficult to remove cleanly. After 5 minutes, invert the bundt pan onto a serving plate or wire rack. Gently lift the pan away. Let the monkey bread cool for an additional 5-10 minutes before proceeding to the icing stage.

Step 10: Drizzle and Serve
While the monkey bread cools slightly, prepare your luscious glaze. In a small bowl, whisk together the icing sugar and dairy-free milk until the consistency is perfectly smooth, shiny, and easily drizzle-able. If the glaze is too thick, add a tiny bit more milk (a few drops at a time); if it’s too thin, incorporate a touch more icing sugar. Generously drizzle this sweet icing all over the top of the warm monkey bread, allowing it to cascade down the sides and seep into the delicious crevices. The warmth of the bread will slightly melt the icing, creating an even more irresistible finish. Serve immediately and enjoy the communal joy of pulling apart this delightful treat!

- **Nutty Delight:** For added texture and flavor, fold in chopped pecans, walnuts, or almonds into the cinnamon-sugar coating mix, or sprinkle them between layers as you build the bread in the bundt pan. Toasted nuts add an even deeper flavor.
- **Chocolate Lover’s Dream:** Elevate your monkey bread by adding vegan chocolate chips, chunks, or even mini chocolate chips to the dough balls before coating, or generously sprinkle them between layers for melty pockets of chocolate goodness.
- **Fruity Twist:** Introduce a burst of fruity flavor by incorporating finely diced dried cranberries, golden raisins, chopped dried apricots, or even a hint of chopped candied ginger into the coating or dough.
- **Spiced & Warming:** Enhance the classic cinnamon flavor by adding a pinch of other warm spices like nutmeg, cardamom, allspice, or a touch of ground cloves to the sugar mixture for a more complex aroma.
- **Citrusy Brightness:** For a refreshing and brighter flavor profile, add finely grated orange or lemon zest to the dough, or infuse the glaze with a teaspoon of citrus juice.
- **Caramel Infusion:** Instead of the powdered sugar glaze, drizzle with a generous amount of homemade vegan caramel sauce for an extra rich and decadent finish.
- **Apple Cinnamon Monkey Bread:** For a seasonal twist, finely dice a small apple and toss it with a little extra cinnamon before sprinkling it between the dough layers.
Frequently Asked Questions About Vegan Monkey Bread
How do you know when vegan monkey bread is done baking?
When monkey bread is finished baking, it will be beautifully golden-brown on top and appear puffy and firm to the touch. The best way to be absolutely sure it’s cooked through is to use an instant-read thermometer; the internal temperature should register between 200-210°F (93-99°C) in the thickest part. Alternatively, a skewer or toothpick inserted into the center should come out mostly clean, though some slight stickiness from the caramelized sugar is completely normal and desirable.
What can you use instead of a Bundt pan for monkey bread?
If you don’t own a bundt pan, don’t fret! You can absolutely make delicious monkey bread using other common baking pans. A standard loaf pan, a 9×13 inch rectangular baking dish, or even a round cake pan (9 or 10 inches) will work. The most important thing is to ensure the pan is completely sealed (avoid springform pans, as the hot, sticky cinnamon sugar could leak out and burn in your oven). Whichever alternative pan you choose, make sure to grease it just as thoroughly and generously as you would a bundt pan to prevent sticking.
Do you refrigerate vegan monkey bread?
It is generally not recommended to refrigerate cooked monkey bread. The cool, dry environment of a refrigerator tends to cause yeast breads to dry out and become stale much faster. For optimal freshness, softness, and flavor, it’s best to store your vegan monkey bread in an airtight container at room temperature on your countertop. It will remain wonderfully delicious for up to 3 days. If it starts to firm up, a quick warm-up in the microwave or oven can revive its gooey texture.
Success Tips for Flawless Vegan Monkey Bread
Achieving perfectly tender, gooey, and irresistible vegan monkey bread is easy when you follow these expert tips and tricks:
- **Ensure Yeast Activation is Key:** Always use fresh, unexpired quick-rise yeast. Before mixing with flour, confirm your warm dairy-free milk is at the ideal temperature (105-115°F or 40-46°C) to activate the yeast. If your yeast mixture doesn’t become foamy and bubbly after 5-10 minutes, your yeast might be old or the milk too hot/cold, and it’s best to start with new yeast. This is fundamental for a good rise.
- **Proper Kneading for a Silky Dough:** Knead the dough for the recommended 3-5 minutes until it feels incredibly smooth, elastic, and forms a cohesive ball. This essential step develops the gluten, which is crucial for achieving a soft, chewy, and airy texture in your monkey bread. If using a stand mixer, attach the dough hook and begin mixing on low speed (speed 1) to gently incorporate the liquids, then increase to medium speed (speed 5) for 3-5 minutes until the dough pulls away from the sides of the bowl and forms a smooth ball.
- **Thoroughly Grease Your Bundt Pan:** Monkey bread is notoriously sticky due to its caramelized sugar coating. To prevent it from adhering stubbornly to the pan, generously coat every single inch of your bundt pan with non-stick cooking spray or melted vegan butter. Pay special attention to all the intricate crevices and the center tube – don’t miss a spot!
- **Timely Removal from Pan is Critical:** This step cannot be emphasized enough! Once baked, allow the monkey bread to cool in the bundt pan for precisely 5 minutes – no longer. The hot sugar coating will begin to harden and solidify very quickly, making it incredibly difficult to invert and remove the bread cleanly if left in the pan for too long.
- **Uniform Dough Balls for Even Baking:** Strive to make your individual dough balls as evenly sized as possible when rolling them out. This attention to detail ensures that all the pieces bake at the same rate, resulting in a consistently cooked, perfectly textured, and visually appealing monkey bread throughout.
- **Never Skip the Double Rise:** It can be tempting to rush the process, but allowing the dough to rise twice is absolutely fundamental for achieving that coveted light, fluffy, and tender “pull-apart” texture. The first rise develops flavor and strengthens the gluten structure, while the second rise in the bundt pan gives the final product its airy volume and melt-in-your-mouth tenderness. Patience here truly pays off!

Storing & Freezing Your Vegan Monkey Bread
To ensure your delicious vegan monkey bread remains as fresh and enjoyable as possible, here are the best practices for storing and freezing:
- **Storing:** Vegan monkey bread is undoubtedly at its peak when enjoyed on the day it’s baked, while it’s still warm, soft, and gloriously gooey. However, any delicious leftovers can be stored in an airtight container at room temperature on your countertop for up to 3 days. Over time, the cinnamon-sugar coating may firm up and become a bit drier, but it will still be incredibly tasty. Always ensure the bread has cooled completely before placing it in a container to prevent any condensation from making it soggy.
- **Freezing:** If you’ve baked a large batch or wish to prepare this delightful treat ahead of time, cooled monkey bread freezes beautifully. You can freeze it whole or, more practically, in convenient sections. To freeze, wrap the bread tightly first in plastic wrap, ensuring maximum protection from air, and then in a layer of aluminum foil. This double wrapping helps to prevent freezer burn. Place the wrapped bread into a freezer-safe bag or an airtight container, where it will stay fresh and delicious for up to 2 months.
- **Defrosting & Reheating:** To enjoy your frozen monkey bread, transfer it from the freezer to the refrigerator and allow it to thaw completely overnight. Once thawed, you can easily warm it before serving to bring back its fresh-baked appeal. Preheat your oven to 325°F (160°C). Place the monkey bread (covered loosely with aluminum foil to prevent over-browning) into the oven for about 10-15 minutes, or until it’s warmed through and the sugar coating has softened and become gooey again. The exact reheating time may vary slightly depending on the size of the piece you are warming.

Servings: 8
Ingredients
For the Dough
- 2 tbsp melted vegan butter (30 g)
- 1 1/3 cup warmed dairy-free milk (325 ml, unsweetened almond, soy or cashew)
- 1/4 cup cane sugar (60 g)
- 2 1/4 tsp quick rise yeast (8 g)
- 3 1/2 cups all-purpose unbleached flour, sifted (580 g)
- 2 tsp salt (10 g)
For the Cinnamon Sugar Coating
- 1 tbsp cinnamon (15 g)
- 1/2 cup brown sugar (75 g)
- 1/2 cup cane sugar (60 g)
- 1/2 cup melted vegan butter or coconut oil (120 g)
For the Glaze
- 1 cup icing sugar (125 g)
- 2 tbsp dairy-free milk (30 ml)
Instructions
- In a small bowl, mix together the melted vegan butter, warmed non-dairy milk, cane sugar, and quick-rise yeast. Set aside for 5-10 minutes until foamy.
- Add the sifted all-purpose flour and salt to a medium bowl and mix together, then create a “well” in the center.
- Pour in the activated yeast mixture. Using a wooden spoon, slowly start incorporating flour in with the liquid, and continue to mix until the flour is almost fully combined and a shaggy dough forms.
- Empty the bowl onto a lightly floured surface and continue to knead until a smooth, elastic ball has formed and the dough feels silky, usually about 3-5 minutes. Note: If using a stand mixer, follow similar steps: use a dough hook, place flour mixture in bowl, slowly incorporate liquid on speed 1, then turn speed up to 5 and mix for 3-5 minutes.
- Place the dough ball in a large, lightly-greased mixing bowl and cover it with a tea towel. Place the bowl in a warm, draft-free area in your kitchen and allow dough to rest and double in size, roughly 1 hour.
- While the dough is resting, prepare your coating. In a small bowl, mix together the brown sugar, cane sugar, and cinnamon. In a separate small bowl, prepare the melted vegan butter. Set aside for later. Grease a 10-inch bundt pan with non-stick cooking spray and set aside.
- Once the dough has rested, turn it out onto a floured surface and roll it out into an 8-inch square. Use a knife to cut the square into 1-inch square pieces. Roll each square into a small ball.
- One by one, dip each dough ball in the melted vegan butter, dripping off any excess, then roll it generously in the cinnamon-sugar mixture. Place each dipped ball in the greased bundt pan, building upwards in layers in a circular motion around the pan.
- When the bundt pan is full, cover it snugly with plastic wrap and place in the same warm, draft-free corner of your kitchen for an additional 1 hour for the second rise.
- When it’s getting close to an hour, preheat the oven to 350°F (175°C).
- Once the dough has risen a second time, place the bundt pan in the preheated oven for 35-40 minutes. The monkey bread should be beautifully golden brown and puffy. Remove from the oven and allow to rest in the pan for exactly 5 minutes (no longer, or the sugar could harden and stick). Turn the bread out upside down onto a serving plate and let cool for an additional 5-10 minutes.
- While the bread cools slightly, mix together the icing sugar and dairy-free milk until the consistency is smooth, shiny, and drizzle-able. Generously drizzle the icing all over the top of the warm bread, letting it cascade down the sides. Enjoy right away, pulling off individual pieces!
Notes
Vegan monkey bread is best to enjoy the day it’s baked, but will last up to 3 days in a sealed airtight container at room temperature. Ensure it cools completely before storing to maintain freshness.
