Key Ingredients for Your Flavorful Salad

Crafting a truly exceptional salad starts with high-quality, fresh ingredients. Here’s a closer look at what you’ll need and why each component is vital to this recipe’s success:

A collection of fresh ingredients laid out on a kitchen counter, including a head of cauliflower, vibrant kale, ripe avocado, lemons, a bottle of hot sauce, and a jar of tahini, ready for meal preparation.

For the Spicy Buffalo Cauliflower:

  • Cauliflower: You’ll need one medium-sized head of cauliflower. This cruciferous vegetable is the star of the show, transforming into wonderfully tender yet crispy “wings” that absorb the buffalo flavor beautifully. Its neutral taste makes it incredibly versatile. Chop it into bite-sized florets for optimal surface area for the batter and sauce.
  • Buffalo Sauce: The heart of the flavor! Frank’s Buffalo Sauce is a popular choice for its classic, tangy heat, but feel free to use your favorite brand. You can also adjust the amount to suit your preferred spice level. For an extra kick, a dash of cayenne pepper can be added to the batter.
  • Brown Rice Flour: This is key to creating that desirable crispy coating on the cauliflower. It helps the batter adhere and provides a gluten-free crispness. If brown rice flour isn’t available, an all-purpose flour, spelt flour, or even chickpea flour can be used as substitutes, though the texture may vary slightly.
  • Water: Used to create a light batter consistency when mixed with the flour and spices, ensuring an even coating on the cauliflower.
  • Garlic Powder & Salt: These seasonings enhance the cauliflower’s flavor, providing an aromatic foundation for the spicy buffalo sauce. Don’t underestimate the power of a good seasoning blend!
  • Olive Oil (for coating): A touch of olive oil helps the cauliflower crisp up beautifully in the oven and ensures the buffalo sauce adheres well. For an oil-free option, see the “Can I Make This Oil-Free?” section below.

For the Sweet Roasted Red Onions:

  • Red Onion: A medium-sized red onion, roughly chopped, will roast to a sweet, tender perfection, offering a delightful counterpoint to the spicy cauliflower. Roasting brings out their natural sweetness and mellows their sharpness.
  • Olive Oil (for roasting): A small amount of olive oil helps the onions caramelize and soften. Again, this can be omitted for an oil-free version.
  • Sea Salt and Pepper: Simple seasonings are all you need to highlight the natural flavors of the roasted onions.

For the Fresh Kale Salad Base & Toppings:

  • Kale: Any variety of kale will work (curly, Lacinato/dinosaur, red). Ensure it’s thoroughly washed, de-stemmed, and finely chopped. Kale is packed with vitamins A, K, and C, and its hearty texture holds up well to the dressing and toppings. Massaging the kale is a crucial step for a tender, more palatable salad.
  • Tahini or Tahini Sauce: This creamy sesame paste is essential for richness and acts as a base for the dressing. You can drizzle plain tahini for a nutty flavor or prepare a quick lemon tahini sauce or a ranch tahini sauce for an added layer of flavor and creaminess.
  • Avocado: Ripe avocado adds a luxurious creaminess and healthy monounsaturated fats to the salad. Use a quarter to a half of an avocado per serving, depending on your preference. Its cooling nature also helps balance the buffalo spice.
  • Vegan Parmesan (Optional but Recommended): This adds a savory, umami-rich finish to the salad, mimicking the sharp taste of traditional parmesan. You can use a store-bought vegan parmesan or easily make your own with cashews or almonds and nutritional yeast using this Vegan Parmesan Cheese recipe.
  • Scallions (Green Onions): Finely chopped scallions provide a mild oniony crunch and a fresh, bright finish to the salad.
  • Fresh Lemon Juice: A squeeze of lemon juice brightens the flavors of the kale and tahini, and aids in massaging the kale to tenderness.

Step-by-Step Guide to Crafting Your Salad

Follow these simple steps to create your delicious Vegan Buffalo Cauliflower Kale Salad:

Step 1: Prepare and Bake the Buffalo Cauliflower

Preheat your oven to 450°F (230°C). Wash and chop your whole cauliflower head into bite-sized florets. Place these florets into a large mixing bowl. In a separate bowl, whisk together the brown rice flour, water, garlic powder, salt, and pepper to create a smooth batter. Pour this batter over the cauliflower florets and toss gently until each piece is evenly coated. It’s important that the cauliflower is well-covered to achieve the best crispness. Arrange the battered cauliflower in a single layer on a baking sheet lined with parchment paper or a silicone baking mat. This single layer is crucial for even cooking and crisping; overcrowding the pan will steam the cauliflower instead of roasting it. Bake for 20-25 minutes until the cauliflower is tender and lightly golden. While it bakes, prepare your buffalo sauce mixture by combining 1/3 cup buffalo sauce with 1 tablespoon of olive oil in a small dish.

Pouring a milky batter over chopped cauliflower in a clear glass bowl, ensuring each floret is coated for baking.

After the initial baking period, remove the tray from the oven. Drizzle the buffalo sauce mixture directly over the baked cauliflower on the baking tray. Toss to coat thoroughly. Return the cauliflower to the oven and bake for another 10 minutes, or until the florets are tender, beautifully browned, and the sauce is slightly caramelized. For an extra crispy finish, you can broil the cauliflower for the last 2-3 minutes, but watch it very closely to prevent burning.

Step 2: Roast the Red Onions

While the cauliflower is baking, peel and slice your red onion into medium-thick pieces. Place them in a bowl, drizzle with about 1/4 teaspoon of olive oil, and sprinkle with a pinch of sea salt and pepper. Toss to coat. Arrange the seasoned red onion slices on a baking sheet (you can use the same one as the cauliflower if there’s space, or a separate one) lined with parchment paper. Place them in the oven alongside the cauliflower. Bake for approximately 20 minutes, or until the onions are tender, slightly caramelized, and beginning to brown at the edges. Roasted red onions add a wonderful sweetness and depth of flavor to the salad.

Step 3: Prepare and Assemble the Kale Salad

While your cauliflower and onions are roasting, prepare the kale. Remove the tough central stems from the kale leaves, then wash them thoroughly and chop them finely into bite-sized pieces. Place the chopped kale in a large mixing bowl. Drizzle with a tiny amount of olive oil (about 1/2 teaspoon, optional for massaging) and a generous squeeze of fresh lemon juice. Now, the magic step: massage the kale with your hands for 1-2 minutes. Gently squeeze and rub the kale leaves between your fingers until they soften significantly and turn a darker, brighter green. This process breaks down the tough fibers, making the kale more tender, easier to digest, and much more enjoyable to eat. A sprinkle of sea salt can also be added during the massage for extra flavor. If you’re preparing multiple servings, massage all the kale together before dividing it into individual serving bowls. If you prefer to massage the kale with just oil and lemon, you can drizzle the tahini sauce over the assembled salad later.

Once the roasted cauliflower and onions are ready, it’s time to assemble your masterpieces. Start with a generous base of massaged kale in each serving bowl. Artfully arrange the spicy buffalo cauliflower florets, sweet roasted red onions, and creamy avocado slices on top. Drizzle generously with your tahini or tahini sauce. Finish with a sprinkle of finely chopped scallions and, if using, a healthy dusting of vegan parmesan cheese. Now, your ultimate Vegan Buffalo Cauliflower Kale Salad is ready to be devoured!

Expert Tips for the Best Buffalo Cauliflower Kale Salad

To ensure your salad is nothing short of perfect, consider these additional tips and frequently asked questions:

  • Customize Your Serving Size: The buffalo cauliflower recipe yields enough for about 3-4 salads, depending on how generously you portion it. Feel free to adjust the quantities of kale, avocado, and other toppings to match your desired serving size or hunger level. If you’re only making one salad, store the leftover buffalo cauliflower for convenient snacking or for a quick addition to other meals like wraps or grain bowls.
  • Creative Ingredient Swaps: Don’t be afraid to experiment with substitutions based on what you have on hand or what you prefer.
    • Onions: No red onion? Yellow, white, or sweet onions can be roasted in a similar fashion for a slightly different, but equally delicious, flavor profile.
    • Cauliflower Alternatives: If cauliflower isn’t available or you’re looking for a change, try roasting other vegetables like broccoli florets, or use protein-rich alternatives such as buffalo chickpeas or BBQ chickpeas for a similar texture and flavor experience.
    • Greens: While kale is recommended for its sturdy texture and health benefits, you can swap it for other hearty greens like collard greens or even a mix of spinach and arugula for a lighter option. Remember to adjust the massaging time accordingly for softer greens.
  • Elevate with Various Sauces: While tahini is fantastic, explore other creamy vegan dressings to add variety. Consider a savory miso tahini sauce, a refreshing tofu-based vegan ranch, a tangy tahini ranch dressing, or even a zesty vegan tzatziki for a cooling contrast to the spicy cauliflower.
  • Achieve Maximum Crispness: For the crispiest buffalo cauliflower, ensure your oven is fully preheated and don’t overcrowd the baking sheet. Air circulation is key. Using a convection setting if your oven has one can also help achieve a crunchier exterior.
  • Make Ahead Tips: The buffalo cauliflower and roasted red onions can be prepared a day or two in advance and stored separately. When ready to serve, reheat the cauliflower in the oven to crisp it up before assembling the fresh salad components. This makes meal prep a breeze!

Storage and Reheating Suggestions

Proper storage ensures you can enjoy your delicious salad for days to come:

  • Leftover Baked Cauliflower: Any leftover baked buffalo cauliflower can be stored in an airtight container in the fridge for up to 4 days. While it may lose some of its crispness and become a bit soggy, it remains incredibly flavorful. To revive its texture, simply reheat it in the oven (or a toaster oven) at 350°F (175°C) for a few minutes, or use the broil setting for a quick crisp.
  • Assembled Salads: If you’ve already assembled your salad, it’s best consumed within 1-2 days. The kale will soften over time, and the avocado may brown slightly. For optimal freshness and texture, it’s always best to store the components separately and assemble just before serving.

Can I Make This Oil-Free?

Absolutely! This recipe can easily be adapted to be completely oil-free without sacrificing much flavor or texture. To do so:

  • Buffalo Cauliflower: Omit the olive oil from the buffalo cauliflower batter and for coating the cauliflower. The water and flour mixture will still create a sufficient coating for baking.
  • Roasted Onions: Roast the red onions without any oil. For added flavor and to help with caramelization, you can toss them with a splash of balsamic vinegar before baking instead of oil. Balsamic vinegar adds a wonderful tang and slight sweetness that complements the roasted onions beautifully.
  • Kale Massage: When massaging the kale, use just lemon juice and a pinch of salt. You can then drizzle the salad with an oil-free tahini sauce or another oil-free dressing of your choice.

Total: 35 mins

Servings: 4

Ingredients

For the Buffalo Cauliflower

  • 1 average-sized head of cauliflower, chopped into bite-sized pieces
  • 1/3 cup brown rice flour
  • 1/2 cup water
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • 1/3 cup buffalo sauce

For the Roasted Red Onions

  • 1 red onion, peeled and roughly chopped
  • 1/4 tsp olive oil
  • Pinch of sea salt and pepper

For the Kale Salad

  • 6 cups of de-stemmed and finely chopped kale (about 1.5 cups per salad)
  • 8 tbsp tahini, lemon tahini sauce, or ranch tahini sauce (about 2 tbsp per salad)
  • Squeeze of fresh lemon juice
  • 2 avocados, peeled and diced (1/2 an avocado per salad)
  • 6 scallions, finely chopped (a few tbsp per salad)
  • 8 tbsp vegan parmesan, optional (make your own with cashews or almonds and nutritional yeast)

Instructions

To Make the Buffalo Cauliflower

  1. Pre-heat oven to 450 degrees F (230°C).
  2. Place the chopped cauliflower in a large bowl.
  3. Mix the flour, water, garlic powder, salt, and pepper in a separate bowl, then add to the cauliflower and mix to coat thoroughly.
  4. Place the cauliflower in a single layer on a parchment or silicone baking mat-lined baking sheet.
  5. Bake for 20-25 minutes. While that’s baking, mix the buffalo sauce and olive oil in a small dish.
  6. After 20 minutes or so, remove the cauliflower from the oven, coat with the buffalo sauce mixture, then bake for another 10 minutes until starting to brown and tender. You can broil for the last few minutes for a little extra crisp, but watch carefully to prevent burning.

To Make the Roasted Red Onion

  1. Slice the red onion, drizzle it with a tiny bit of olive oil and sprinkle with salt and pepper.
  2. Place on a parchment or silicone baking mat-lined baking sheet and add to the oven with the cauliflower.
  3. Bake for about 20 minutes until tender and starting to brown.

To Make the Kale Salad

  1. While the cauliflower and onions are baking, tear the amount of kale you want into bite-sized pieces and place in a bowl. Drizzle with tahini, add a spritz of fresh lemon juice, and a sprinkle of sea salt. Then, rub it all in with your hands until all the kale is coated and softened. If you’re making more than a single serving, add all the kale to a large bowl and massage with the tahini, lemon, and salt before dividing it into serving bowls. Set aside.
  2. Once the cauliflower and onions are ready, you can assemble the salads.
  3. For each salad, start with a base of massaged kale, then top with buffalo cauliflower, roasted red onion, avocado, green onions (scallions), and a generous sprinkling of vegan parmesan.

Notes

The buffalo cauliflower recipe makes enough for 3-4 salads, depending on how much you use per salad. Adjust the rest of the ingredients accordingly to your preference. Feel free to use more onion, kale, or avocado if desired.

Store leftover buffalo cauliflower in the fridge for up to 4 days. It may become a bit soggy, but it’s still tasty, especially if reheated in the oven or under the broiler for a few minutes to crisp it back up. Assembled salads will keep for 2 days in the fridge (best within a day or two for optimal freshness).

This recipe can be made oil-free by omitting the oil used for the cauliflower and onion. For roasting the onion, balsamic vinegar makes a nice replacement for oil, adding a pleasant tang.

If you prefer, massage the kale with 1/2 tsp olive oil (or just lemon and salt for oil-free) instead of tahini and lemon. Then, drizzle the salad with a tahini sauce or other dressing of your choice. Both methods work great, and the latter allows for a more generous dressing on the final salad.
