Unpacking the Wholesome Ingredients

To create these delightful bars exactly as I envisioned them, here’s a closer look at the high-quality ingredients you’ll need:

  1. Premium Tahini: The cornerstone of these bars, tahini lends a unique depth of flavor and contributes significantly to their creamy texture. For the best results, select a tahini that is wonderfully smooth and pourable, with a subtly sweet, nutty taste rather than an overpowering bitterness. In Canada, Arz Fine Foods is a standout brand for its ultra-smooth consistency and excellent flavor profile, which integrates seamlessly into recipes. When shopping, always scrutinize the ingredient label: pure tahini should list only one ingredient – sesame seeds. Avoid brands that include added oils or sugars, as these can compromise both flavor and health benefits. Tahini is also a fantastic source of healthy fats, calcium, iron, and magnesium, making these bars not just tasty, but also nutritionally robust.
  2. Raw Cashews: These versatile nuts form the creamy base of our bars. Opt for raw cashews with a clean ingredient list – ideally, just “cashews.” Steer clear of any varieties with added oils, salt, or sugar. Raw cashews are preferred in no-bake recipes because their natural oils and softer texture blend into a smooth, buttery consistency without needing to be roasted. However, if raw cashews are unavailable, dry-roasted unsalted cashews can be used in a pinch; just be mindful of any added salt if you plan to incorporate more sea salt into the recipe. Cashews are known for their heart-healthy monounsaturated fats and essential minerals like zinc and magnesium.
  3. Soft, Pitted Dates: Dates are the natural sweetener and binding agent that hold these bars together. The key here is using dates that are soft and moist, as this quality is crucial for achieving the perfect dough-like consistency in no-bake recipes. My personal favorites are pitted Sayer dates, which are small, incredibly sweet, and possess a rich, distinct caramel flavor that enhances the overall profile of the bars. Medjool dates are another excellent choice, known for their large size, soft texture, and intense sweetness. Deglet Noor or Honey dates would also work beautifully, provided they are soft enough. If you only have access to harder, drier dates, don’t despair! Simply place them in a bowl, cover them with boiling water, let them soak for about 15 minutes, and then drain them thoroughly before using. This simple rehydration step will bring them back to life and ensure they blend smoothly into your mixture. Dates are packed with fiber, potassium, and antioxidants.
  4. High-Quality Dairy-Free Chocolate: If you’re opting for the irresistible chocolate topping – and I highly recommend it for that extra touch of deliciousness! – selecting a good quality dairy-free dark chocolate or dairy-free chocolate chips is paramount. Brands like Alter Eco, Green & Blacks, and Enjoy Life Chocolate Chips and Chocolate Morsels are excellent choices known for their rich flavor and smooth melt. The quality of your chocolate will significantly impact the final taste and texture of your topping. Alternatively, for a truly homemade touch, you can prepare the decadent chocolate ganache recipe featured in my No-Bake Cashew Cookie Dough Bars, which offers a customizable and equally delicious option.
  5. Flaky Sea Salt: While entirely optional, a generous sprinkle of sea salt is a game-changer. The subtle saltiness perfectly complements and enhances the sweetness of the dates and chocolate, creating a wonderfully balanced flavor profile that elevates these bars from great to extraordinary. I incorporate a small amount of salt within the bar mixture itself and then finish with a delicate sprinkle on top of the chocolate. The contrasting textures and flavors create an addictive combination that will leave you reaching for another bar.

No-Bake Cashew Tahini Bars

By: Deryn Macey

These simple, no-bake bars are a breeze to make and are totally suitable for snacking but still delicious enough for dessert. Rated 4.84 out of 5 stars from 6 votes.

Prep Time: 10 mins

Chill Time: 2 hrs

Total Time: 2 hrs 10 mins

Yields: 16 bars

Ingredients

  • 1 1/2 cups (210 g) raw cashews
  • 1 cup (250 g) tightly packed soft, pitted dates*
  • 1/2 cup (120 g) tahini
  • 3/4 cup (120 g) dark chocolate chips or chopped dark chocolate
  • Sprinkle of sea salt

Instructions

  1. Begin by adding the raw cashews to a powerful food processor. Pulse them until they are mostly broken down into a coarse meal. Be careful not to over-process them into a butter at this stage.
  2. Next, add the soft, pitted dates and the creamy tahini to the food processor with the cashews. Continue mixing and pulsing until the ingredients come together to form a large, thick, and cohesive dough-like clump. It should be sticky and easy to press.
  3. Prepare a square baking pan (a 7×7 inch pan works perfectly for this recipe) by lining it with two overlapping strips of parchment paper or wax paper. This will make it incredibly easy to lift the bars out once they’re set. Firmly press the cashew-date-tahini dough evenly into the prepared pan, taking a few minutes to ensure it’s smooth and compact. The firmer you press, the better the bars will hold together.
  4. In a microwave-safe bowl, over a pot of gently boiling water (creating a double boiler), or using a dedicated double boiler, melt the dairy-free chocolate until it is completely smooth and creamy. Once melted, use a spatula to carefully spread the chocolate evenly over the pressed bar base. Immediately after spreading the chocolate, sprinkle it generously with flaky sea salt for that perfect sweet and salty balance.
  5. Place the pan into the freezer for at least 2 hours to allow the bars to firm up and the chocolate to set completely. Once thoroughly chilled and firm, lift the entire block out of the pan using the parchment paper overhangs. Place it on a cutting board and cut it into 16 uniform squares. If you prefer larger portions, you can cut them into 8 generous bars instead.

Recipe Notes

For an extra rich and decadent chocolate layer, feel free to double the amount of chocolate used for the topping. If you’re looking for an alternative chocolate coating, consider using my recipe for raw vegan chocolate, which offers a customizable and equally delicious option.
