Essential Ingredient Notes for Your Buddha Bowl

Crafting the perfect Tofu Edamame Buddha Bowl starts with understanding your ingredients. Below are key notes and recommendations to ensure your bowl is flavorful, nutritious, and perfectly balanced. A complete list of ingredients with precise measurements can be found in the recipe card below.

Labelled ingredients for making a tofu edamame buddha bowl.
  • Tofu: The star of our protein show! Opt for firm or extra-firm tofu for the best texture when baked. While pressing tofu helps remove excess water and leads to crispier results, it’s not strictly necessary for this recipe if you’re short on time. However, for maximum crispiness and flavor absorption, a quick press of 15-30 minutes can make a noticeable difference.
  • Almond Butter: This forms the creamy, rich base of our irresistible satay-style sauce. For a delicious alternative, you can easily substitute it with smooth peanut butter. If you need a nut-free version, sunflower seed butter (like SunButter) or even tahini can work wonderfully, though the flavor profile will shift slightly.
  • Edamame: Frozen, shelled edamame is a true convenience hero here. It cooks quickly and adds a pop of vibrant green, a tender bite, and a significant protein boost. Simply steam or boil according to package instructions.
  • Cabbage: Whether you choose red or green (purple) cabbage, both will add a fantastic crisp-tender texture and a slightly sweet flavor once roasted. Red cabbage will also lend a beautiful pop of color to your bowl.
  • Rice: Our preferred base is wholesome brown rice for its nutty flavor and added fiber. However, feel free to switch it up with white rice, quinoa for a complete protein boost, or farro for a chewier texture. For a low-carb alternative, cauliflower rice makes an excellent substitution, adding extra vegetables without the carbs.
  • Sweet Chili Sauce: This ingredient is crucial for the sauce’s sweet and tangy kick. Always check the label if you’re following a gluten-free diet, as some brands may contain gluten.
  • Tamari: A gluten-free alternative to soy sauce, providing that essential umami depth to both the tofu marinade and the sauce. Ensure you use a certified gluten-free brand if necessary.

Creative Variations & Additions to Elevate Your Buddha Bowl

One of the best aspects of Buddha bowls is their incredible adaptability. Feel free to use this recipe as a starting point and let your culinary creativity shine! Here are some ideas to customize your Tofu Edamame Buddha Bowl:

  • Alternative Dressing Recipes: Don’t limit yourself to just one sauce! Explore these other fantastic dressings to change up the flavor profile:
    • Classic Creamy Peanut Sauce
    • Zesty Teriyaki Sauce
    • Rich Coconut Peanut Sauce
    • Spicy Hot Chili Dressing
    • A simple tahini-lemon dressing for a brighter, fresher taste.
  • Veggie Variations: Boost the nutrient content and diversify textures with these additions:
    • Swap out the cabbage for thinly sliced kale or baby spinach, massaged lightly with a touch of oil and salt.
    • Add roasted or steamed vegetables like tender broccoli florets, zucchini slices, or vibrant bell peppers.
    • Incorporate fresh, crunchy vegetables such as crisp snow peas, thinly sliced radish, cucumber, or a handful of leafy greens.
    • For a tangy twist, include some quick-pickled vegetables like red onions or carrots.
    • Add a handful of cherry tomatoes for a burst of freshness.
  • Grain Options: Experiment with different bases to suit your dietary needs or preferences:
    • Switch out brown rice for protein-packed quinoa, chewy farro, or a low-carb cauliflower rice.
    • For a noodle bowl experience, use cooked rice noodles instead of grains.
    • Try couscous or millet for a different texture.
  • Protein Boosters: Increase the protein and make your bowl even more substantial:
    • Use flavorful tempeh (baked or pan-fried) or a store-bought vegan meat alternative instead of tofu.
    • Prepare this sweet chili tofu for a different flavor profile than simple baked tofu.
    • Add cooked chickpeas, black beans, or lentils for additional protein and fiber, making the bowl extra hearty.
    • Crispy roasted chickpeas can add a fantastic crunch.
  • Garnish and Finishing Touches: These small additions can make a big difference in flavor and presentation:
    • Sprinkle generously with toasted sesame seeds or crunchy crushed peanuts for added texture and nutty flavor.
    • Add an extra drizzle of Sriracha, your favorite hot sauce, or sambal oelek for an extra spicy kick.
    • Serve with fresh lime wedges for a bright, zesty finish that cuts through the richness of the sauce.
    • Garnish with finely chopped fresh cilantro or green onions for a burst of fresh herb flavor.
    • A sprinkle of flaky sea salt can enhance all the flavors.

Step-by-Step Instructions for Your Perfect Buddha Bowl

Creating these delicious Tofu Edamame Buddha Bowls is a straightforward process, designed for efficiency and ease. Follow these detailed steps to assemble your vibrant, healthy meal.

Before you Start: Preheat your oven to 400 F (200 C). If you don’t have pre-cooked rice on hand, now is the time to start cooking it according to its package instructions. Brown rice can take up to 45 minutes, so plan accordingly.

Step 1: Bake the Tofu to Crispy Perfection

Begin by cutting your firm or extra-firm tofu into even, bite-sized cubes. Place the tofu cubes in a bowl and gently toss them with the soy sauce (or gluten-free tamari), black pepper, and garlic powder, ensuring each piece is evenly coated. This marinade will infuse the tofu with savory flavor as it bakes.

Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking (alternatively, use a bit of non-stick cooking spray). Arrange the seasoned tofu cubes in a single layer on the prepared tray. Bake for a total of 30 minutes, making sure to flip the tofu pieces halfway through to ensure they brown and crisp up evenly on all sides, achieving that coveted chewy-crispy texture.

Step 2: Roast the Cabbage and Prepare Edamame

While the tofu is baking, prepare your roasted cabbage. Slice the cabbage into thin wedges or shreds and spread it out on a large baking tray (or use two smaller trays if needed to avoid overcrowding). Drizzle with 1 teaspoon of oil and sprinkle with a pinch of salt and pepper. Roast in the preheated oven for 30-40 minutes, or until the edges begin to brown and crisp, bringing out its natural sweetness and a delightful texture.

For convenience, the cabbage can go into the oven at the same time as the tofu. This streamlines the cooking process. As an alternative to roasting, you could prepare a fresh, crunchy cabbage slaw instead, which offers a different but equally delicious texture.

Quick Note: If you don’t have cooked edamame ready, get it cooking after you’ve placed the tofu and cabbage in the oven. Frozen shelled edamame typically only needs a few minutes to steam or boil according to package instructions. Once cooked, set it aside.

Step 3: Whisk Together the Creamy Almond Butter Sauce

Now, it’s time to create the magical sauce that ties everything together. In a jar or a small bowl, combine all the ingredients for the almond satay sauce: almond butter, sweet chili sauce, gluten-free tamari (or soy sauce), apple cider vinegar, and light coconut milk.

Whisk vigorously until all ingredients are thoroughly combined and the sauce is completely smooth and creamy. A sealable jar works perfectly for this; simply add all ingredients, secure the lid, and shake it until everything is emulsified. Taste and adjust seasonings if needed, adding a little more sweet chili for heat or tamari for saltiness.

Step 4: Assemble Your Delicious Buddha Bowls

With all your components ready, it’s time for the final assembly! Prepare 4 individual bowls or meal prep containers. Evenly divide the cooked brown rice among them, creating a comforting base.

Next, artfully arrange the baked tofu, cooked edamame, grated carrot, and roasted cabbage over the rice in distinct sections. The visual appeal of a Buddha bowl, with its separated and colorful ingredients, is part of its charm. Once arranged, your bowls are ready for the finishing touch.

Generously top the assembled bowls with the creamy almond butter sauce just before serving, and enjoy this wholesome, flavorful meal!

Recipe Frequently Asked Questions

Is this Tofu Edamame Buddha Bowl recipe gluten-free?

Yes, this recipe can easily be made gluten-free! The key is to ensure you use gluten-free tamari instead of regular soy sauce in both the tofu marinade and the almond butter dressing. Additionally, always verify that any other packaged ingredients, such as your sweet chili sauce, are certified gluten-free, as formulations can vary between brands.

Can I make this Buddha Bowl nut-free?

Absolutely! To make this recipe completely nut-free, simply substitute the almond butter in the dressing with an equal amount of sunflower seed butter (like SunButter) or Wowbutter. These alternatives provide a similar creamy texture and nutty flavor profile without any tree nuts or peanuts.

Can I prepare these bowls in advance for meal prep?

Yes, these Tofu Edamame Buddha Bowls are an excellent choice for meal prep! You can cook the tofu, edamame, cabbage, and rice in advance and store each component separately in airtight containers in the refrigerator for up to 5 days. Alternatively, you can assemble the bowls completely in meal prep containers and store them in the fridge for up to 4 days. When you’re ready to enjoy, you can reheat them gently in the microwave or enjoy them cold for a refreshing lunch.

What are the main health benefits of this bowl?

This Buddha bowl is a powerhouse of nutrition. It’s rich in plant-based protein from tofu and edamame, essential for muscle health and satiety. The brown rice and vegetables provide a significant amount of dietary fiber, aiding digestion and promoting gut health. It’s also packed with vitamins, minerals, and antioxidants from the diverse range of fresh and roasted vegetables, supporting overall wellness and energy levels.

How can I make the baked tofu extra crispy?

For ultra-crispy baked tofu, consider pressing it for at least 30 minutes (or longer) before cubing and marinating. You can also toss the marinated tofu with a small amount of cornstarch before baking – about 1 tablespoon per block of tofu – which creates a wonderfully crisp exterior.

Maximizing Freshness: Storage & Meal Prep Tips

Efficient meal preparation and proper storage are key to enjoying these Tofu Edamame Buddha Bowls throughout the week. Follow these tips to maintain freshness and flavor:

  • Individual Component Storage: To significantly reduce your daily prep time, all of the individual bowl components – the baked tofu, cooked edamame, roasted cabbage, grated carrots, and cooked rice – can be prepared in advance. Store each ingredient separately in airtight containers in the refrigerator for up to 5 days. This allows you to mix and match as desired.
  • Assembled Bowl Storage: If you prefer to assemble your bowls completely for grab-and-go convenience, they will keep well in the fridge for up to 4-5 days. For the best quality and to prevent the rice from becoming soggy, we highly recommend storing the almond butter sauce separately in a small container until just before you are ready to serve or eat. This ensures the fresh components maintain their texture.
  • Sauce Longevity: The versatile almond butter sauce can be made well in advance and stored in a sealed jar in the refrigerator for up to 1 week. It’s natural for the sauce to thicken considerably when chilled. Before serving, you may need to adjust its consistency by whisking in a small amount of water or a splash of coconut milk until it reaches your desired pourable texture.
  • Reheating Instructions: These bowls can be enjoyed cold straight from the fridge for a refreshing meal, or gently reheated. If reheating, warm the components (tofu, rice, cabbage) in the microwave until warmed through to your preference, then add the fresh carrots and sauce.

Ingredients

For the Baked Tofu

    package

    approx. 350 g

  • 2
    tablespoons
    soy sauce or gluten-free tamari,
    30 ml

  • 2
    teaspoons
    garlic powder

  • 1
    teaspoon
    black pepper

For the Almond Satay Sauce

  • 3
    tablespoons
    almond butter,
    45 g

  • 2
    tablespoons
    sweet chili sauce,
    30 g

  • 3
    tablespoons
    gluten-free tamari or soy sauce,
    45 ml

  • 1
    teaspoon
    apple cider vinegar

  • 1/4
    cup
    light coconut milk,
    60 ml

For the Bowls

  • 2
    cups
    cooked shelled edamame,
    300 g

  • 5
    cups
roughly chopped red or green cabbage,
    approx. 500 g

  • 4
    medium carrots,
    grated

  • 2
    cups
    cooked brown rice

Instructions

  • Pre-heat the oven to 400 F (200 C).
  • If you don’t have cooked rice on hand, start preparing that now according to package instructions. Depending on the type of rice used, you may need up to 45 minutes to cook it.
  • To make the tofu, cube it and toss with the soy sauce or tamari, black pepper, and garlic powder. Prepare a baking sheet by either lining it with parchment paper or a silicone baking mat or using some non-stick cooking spray. Place the cubed tofu on the tray and bake for 30 minutes, flipping once halfway through until golden and crispy.
  • To make the roasted cabbage, place the sliced cabbage on a large baking tray or two small ones in a single layer. Add 1 tsp oil and sprinkle with salt and pepper. Roast in the oven for 30-40 minutes until starting to brown and crisp. This can go in the oven at the same time as the tofu.
  • If you don’t have cooked edamame on hand, get that going after you get the tofu and cabbage in the oven. Cook according to package instructions (usually only needs a few minutes). Once cooked, set aside until you’re ready to assemble the bowls.
  • To make the sauce, whisk all the sauce ingredients together in a jar or container, or add to a jar with a lid and shake vigorously until smooth and creamy.
  • Divide the cooked rice, grated carrot, roasted cabbage, baked tofu, and edamame evenly between 4 bowls or storage containers. Finish them off with the creamy almond butter sauce and serve right away, or store in the fridge for up to 5 days.

Notes

To cut down on prep time, any of the bowl components can be made in advance and stored separately up to 5 days in the fridge.

If storing assembled bowls, I suggest storing the sauce separately until just before serving. Assembled bowls will keep for 5 days in the fridge.

Sauce can be made in advance and stored in the fridge for up to 1 week. It will thicken in the fridge so you may need to adjust the consistency with a little water after storing.

Can be enjoyed cold or reheated in the microwave until warmed to your preference.
