While the full wrap experience is truly delightful, the real star of this recipe is undoubtedly the savory, golden-baked sesame tofu. Even if you choose to enjoy it on its own, perhaps with a side of your favorite peanut dipping sauce, this tofu promises to be a game-changer for your plant-based meals.

Crafting the Perfect Baked Sesame Tofu
Baked tofu is a versatile and healthy component for countless dishes, but mastering it involves a few key steps to unlock its full flavor potential. For this recipe, we go the extra mile by both pressing and marinating the tofu. While you might sometimes skip these steps for a quick meal, dedicating a little extra time here yields a significantly more flavorful and satisfying result, transforming ordinary tofu into an extraordinary culinary delight. The secret lies in removing excess water and allowing the tofu to deeply absorb a rich, aromatic marinade.

The Essential Step: Pressing Your Tofu
For truly outstanding baked tofu, pressing it is a highly recommended, if not essential, step. This simple process removes excess water from the tofu block, which is crucial for two main reasons. Firstly, it significantly improves the texture, making the tofu firmer and allowing it to become wonderfully crispy when baked. Secondly, and perhaps even more importantly, removing this water creates space within the tofu structure, enabling it to better absorb the delicious flavors of our sesame marinade. Without pressing, your tofu might end up watery and less flavorful, missing out on the rich taste we’re aiming for.
Pressing tofu is remarkably straightforward and requires no special equipment. Simply take a block of extra-firm tofu, drain any liquid, and wrap it thoroughly in a clean dishcloth or several layers of paper towels. Place the wrapped tofu on a plate or a baking tray to catch any expelled water. Then, find a heavy object—a stack of cookbooks, a cast-iron skillet, or even a few cans of food work perfectly—and place it directly on top of the tofu. Let it sit under this weight for at least 30 minutes. If you have more time, an hour or even longer can yield even better results. The longer you press, the more water is removed, leading to a denser, more absorbent, and ultimately more delicious tofu. You can find more detailed instructions on how to press tofu here.
Perfectly Slicing Tofu for Optimal Wraps
The way you slice your tofu can impact its cooking time and how well it integrates into your lettuce wraps. For this recipe, we recommend cutting the tofu into strips, which are ideal for filling wraps, offering a satisfying bite without being too bulky. To achieve this, begin by slicing your block of pressed tofu in half horizontally, creating two thinner slabs. Then, take each slab and cut it lengthwise into four equal layers. Finally, slice each of these layers into three strips. This method should give you approximately 24 uniform strips from a standard block of tofu, perfect for distribution across your wraps. Of course, feel free to get creative with your cuts! Cubes, larger pieces, or triangles can also work beautifully, offering different textural experiences, but strips provide the best structural integrity for wrapping.
The Heart of the Flavor: Sesame Tofu Marinade
Once your tofu is pressed and sliced, it’s time to infuse it with the incredible flavors of our sesame marinade. This step is critical for developing that deep, umami-rich taste that defines our baked sesame tofu. We highly recommend marinating for at least 30 minutes, though the longer you allow it to soak, the more pronounced and delicious the final flavor will be. Overnight marination in the refrigerator is truly a game-changer if you have the foresight.
Preparing the marinade is effortless. In a shallow bowl or baking pan (a loaf pan works wonderfully for even coating), whisk together the key ingredients: rich sesame oil for its nutty depth, classic soy sauce (opt for tamari if you need a gluten-free alternative), a touch of maple syrup for a hint of sweetness and glaze, a pinch of salt and pepper to balance the flavors, and potent garlic powder for aromatic richness. Add your sliced tofu strips to this flavorful mixture, ensuring each piece is thoroughly coated. To maximize absorption, gently shake or spoon the marinade over the tofu every 10-15 minutes, especially during shorter marination periods. I typically marinate for about 40 minutes, which consistently delivers excellent results.
Just before baking, you’ll incorporate two final ingredients: a tablespoon of cornstarch (or arrowroot powder) and a generous sprinkle of sesame seeds. The cornstarch acts as a binding agent and helps create that desirable crispy exterior, while the sesame seeds add a beautiful visual appeal and an extra layer of nutty flavor and texture. While I haven’t personally tried making the tofu without cornstarch, its contribution to crispiness is usually significant, so I recommend including it for the best possible outcome.

Baking to Crispy Perfection
After carefully pressing and lovingly marinating your tofu, the final step to achieving those irresistible crispy sesame tofu pieces is baking. This stage is surprisingly straightforward, yet a few simple techniques will ensure your tofu comes out golden brown, wonderfully textured, and bursting with flavor. Preheat your oven to a moderate 350°F (175°C) to ensure even cooking without burning.
Prepare a baking sheet by lining it with parchment paper for easy cleanup, or lightly spray it with a non-stick cooking spray, such as coconut oil spray. The key here is to arrange your marinated tofu strips in a single layer on the prepared baking sheet. It’s crucial to give each piece a little space around it. Overcrowding the pan will steam the tofu instead of baking it, preventing it from getting that desirable crispy exterior. Air circulation is your friend in achieving maximum crispiness.
Pop the baking sheet into the preheated oven and bake for approximately 30 to 40 minutes. The exact time may vary slightly depending on your oven and the thickness of your tofu strips, so keep an eye on them. Halfway through the baking time, around the 15-20 minute mark, carefully flip each tofu piece to ensure both sides cook evenly and develop that beautiful golden-brown color and satisfying crunch. When finished, the tofu should be firm, golden, and slightly crisp at the edges. That’s it! Your star ingredient is now ready, and we’re all set to assemble these delicious tofu lettuce wraps.
If you’re not planning on making the lettuce wraps right away, or simply want to enjoy this incredible sesame tofu as a side dish, a protein-packed snack, or even crumbled over a salad, it pairs wonderfully with a flavorful dipping sauce. Consider whipping up a batch of my savory coconut peanut sauce or a rich almond satay sauce for an extra layer of deliciousness. These sauces would also be fantastic drizzled generously over your completed lettuce cups, adding another dimension of taste and moisture.

Elevate Your Wraps: Creative Add-Ins and Garnishes
With your perfectly baked sesame tofu ready, the next exciting step is assembling your vibrant lettuce wraps. This is where you can truly let your creativity shine, as there are no strict rules for what vegetables to include. The beauty of lettuce wraps lies in their versatility and the endless possibilities for customization, allowing you to tailor them to your taste preferences or whatever fresh produce you have on hand.
For this recipe, I’ve opted for a delightful combination that offers both flavor and crunch: tender sautéed mushrooms, finely grated carrots for sweetness, thinly sliced red onion for a zesty bite, crisp cucumber, fresh green onions, creamy avocado, and vibrant red bell pepper. To add a spicy kick that truly ties the flavors together, a drizzle of sriracha is essential.
However, don’t stop there! The world of add-ins is vast and exciting. Consider enhancing the texture with some crushed peanuts or cashews for an extra nutty crunch. Fresh herbs like cilantro or mint can add a burst of refreshing flavor. Finely grated cabbage or a hint of spicy kimchi can bring in delightful tang and crispness. A squeeze of fresh lime juice just before serving brightens all the flavors, offering a zesty finish. Have fun experimenting with different vegetables and garnishes to discover your perfect combination!
When selecting your lettuce, I recommend choosing smaller, cup-sized leaves for easier handling and a neater wrap. While larger leaves certainly work (as seen in some of my photos), they can sometimes be a bit messier to eat. Butter lettuce cups, small romaine lettuce leaves, or even crisp iceberg lettuce cups are excellent choices, providing a sturdy yet pliable vessel for your delicious fillings. These smaller leaves create perfectly portioned, handheld delights that are ideal for appetizers or a light meal.
For those looking for a different flavor profile, you could also experiment with other tofu preparations, such as this savory black pepper tofu, to create an entirely new wrap experience. The possibilities are truly endless, making these lettuce wraps a fantastic canvas for your culinary imagination.

- 1 tbsp garlic powder
- 2 tbsp sesame seeds
- 1 tbsp cornstarch or arrowroot powder
For the Lettuce Wraps
- 12 large romaine or butter lettuce leaves for wrapping
- 1 cup sliced and sautéed mushrooms
- 1 thinly sliced red pepper
- 1 cup grated carrot
- 1/2 a diced cucumber
- 4 chopped green onions
- 1 avocado, diced
- Sriracha or almond satay sauce, for drizzling
- Optional garnishes: fresh lime juice, cilantro, crushed peanuts or cashews
Instructions
- Step 1: Press the Tofu. To prepare the tofu, first wrap the block in a clean dish towel and place it on a plate or baking tray. Stack a few heavy objects, such as cookbooks or a cast-iron pan, on top. Allow it to press for 30-60 minutes to remove excess water.
- Step 2: Prepare the Marinade. While the tofu is pressing, whisk together the sesame oil, soy sauce (or tamari), maple syrup, salt, pepper, and garlic powder in a shallow dish, loaf pan, or roasting pan.
- Step 3: Marinate the Tofu. Once the tofu is pressed, cut it into uniform strips and add them to the prepared marinade. Let the tofu marinate for 30-60 minutes, or even overnight in the refrigerator for deeper flavor.
