Key Ingredients for Your Vegan Zuppa Toscana

Crafting the perfect creamy vegan Zuppa Toscana begins with selecting the right ingredients. Below, you’ll find detailed notes on each component, including recommended varieties and easy substitutions to help you tailor the soup to your preferences and pantry availability. For the precise measurements, please refer to the complete and printable recipe card at the bottom of this article.
- Oil: Extra virgin olive oil is ideal for sautéing, lending a lovely Mediterranean depth to the initial flavors. For an oil-free version, simply use vegetable broth to sauté your aromatics. If you’re not strictly vegan, or prefer a different richness, unsalted butter or a plant-based butter alternative can also be used.
- Chili Flakes: A touch of red pepper flakes adds a subtle warmth and a gentle kick that balances the creamy broth. If you or your family are sensitive to spice, feel free to reduce the amount or omit them entirely without compromising the soup’s deliciousness.
- Fennel Seeds: These are crucial for developing that distinctive, savory “sausage-like” flavor profile that is characteristic of Zuppa Toscana. If whole fennel seeds aren’t available, you can substitute with 1 teaspoon of ground fennel, which offers a similar aromatic contribution.
- Dried Thyme and Oregano: These classic Italian herbs infuse the soup with an aromatic depth that is fundamental to its flavor. Dried herbs are convenient and readily available. For an even fresher taste, consider substituting with 2-3 tablespoons of finely chopped fresh thyme and oregano. Alternatively, 2 teaspoons of a good quality Italian seasoning blend can be used in place of both dried oregano and thyme.
- Smoked Paprika: This spice adds a wonderfully smoky nuance and a beautiful color to the soup, mimicking some of the smokiness often found in traditional Zuppa Toscana sausage. If you only have regular paprika, you can use it, and if you happen to have a dash of liquid smoke on hand, it can further enhance that smoky depth.
- Flour: All-purpose flour is used as a thickener, helping to create the soup’s signature creamy consistency. For a gluten-free option, a 1:1 gluten-free flour blend (such as those containing arrowroot flour, potato starch, or tapioca starch) works perfectly.
- Vegetable Broth: The foundation of our flavorful broth! Use a high-quality homemade vegetable broth for the best results, or opt for your favorite store-bought brand. Both carton broths and bouillon cubes/powder (like Better Than Bouillon) are excellent choices and contribute significantly to the soup’s overall taste.
- Potatoes: Yukon Gold potatoes are highly recommended for their creamy texture and ability to hold their shape well after cooking. However, any yellow potato variety will yield delicious results, providing that essential hearty bulk to the soup.
- Coconut Milk: This is the star ingredient for achieving a rich, dairy-free creaminess without using heavy cream. Light coconut milk is preferred for a subtle coconut flavor that doesn’t overpower the Italian herbs. If you’re not a fan of coconut, an excellent alternative is homemade cashew cream. Soy milk, or a thick oat or almond milk, can also be used, but make sure you enjoy their flavor profile before incorporating them, as they can sometimes alter the soup’s taste.
- Kale: Lacinato kale, also known as Tuscan kale or dinosaur kale, is the traditional choice and our preferred variety for its tender texture and slightly sweet, earthy flavor. However, any type of kale will work beautifully. If kale isn’t available or you prefer a milder green, fresh spinach or Swiss chard are fantastic substitutes.
Creative Additions & Serving Suggestions
One of the best aspects of this vegan Zuppa Toscana is its versatility! Feel free to get creative with these delicious additions and serving suggestions to make the soup truly your own:
- Boost Protein with Beans: For an extra layer of heartiness and plant-based protein, stir in up to 2 cups of canned cannellini beans (rinsed and drained) when you add the kale. Their creamy texture pairs wonderfully with the soup.
- Green Alternatives: While kale is traditional, if you prefer a milder green, fresh spinach or even Swiss chard can be used as a delicious substitute. Add them at the same stage as the kale until just wilted.
- Cheesy Flavor Boost: For a delightful, savory “cheesy” undertone without dairy, stir in 2-3 tablespoons of nutritional yeast at the very end of cooking. It adds a umami depth that complements the creamy broth.
- Gourmet Toppings: Elevate your bowl with a sprinkle of homemade vegan cashew parmesan. Its salty, nutty flavor is a perfect counterpoint to the soup’s richness.
- Savory “Bacon” Crunch: Add a crispy, smoky element with vegan bacon bits. For a homemade touch, try our irresistible coconut bacon, which offers a satisfying crunch and depth of flavor.
- Spice it Up: For those who love extra heat, a pinch more red pepper flakes or a drizzle of your favorite chili oil can add a fantastic fiery kick.
- Fresh Herbs: A garnish of fresh parsley or basil just before serving can brighten the flavors and add a beautiful touch of color.
Easy Step-by-Step Instructions to Make Vegan Zuppa Toscana
Follow these simple steps to create a truly remarkable dairy-free Zuppa Toscana in no time. We’ve broken down each stage to ensure your cooking experience is smooth and enjoyable, resulting in a perfectly creamy and flavorful soup every time.
-
Sauté Aromatics & Spices: In a large, heavy-bottomed soup pot or Dutch oven, heat the olive oil (or a splash of vegetable broth for an oil-free option) over medium heat. Add the diced onions, red pepper flakes, fennel seeds, dried thyme, dried oregano, and smoked paprika, along with a pinch of salt and black pepper. Sauté gently for about 5-7 minutes, stirring frequently, until the onions have softened and become translucent, and the spices are wonderfully fragrant. This initial sautéing step is crucial for building the foundational flavor of your soup.

-
Garlic & Deglazing: Add the pressed or grated garlic to the pot and continue to sauté for another 2-3 minutes, stirring constantly to prevent burning. The garlic should be aromatic but not browned. Next, pour in the lemon juice to deglaze the pan. Use a wooden spoon to vigorously scrape any flavorful brown bits (fond) from the bottom of the pot. These bits are packed with concentrated flavor and will dissolve into the broth, adding incredible depth to your vegan Zuppa Toscana.

-
Create a Roux: Sprinkle the all-purpose flour evenly over the onion and spice mixture. Cook for 1-2 minutes, stirring continuously. This step creates a light roux, which will help thicken the soup and give it that luxurious, creamy texture without any dairy.

-
Blend for Creaminess: Gradually pour in the vegetable broth, stirring constantly to prevent lumps. Bring the mixture to a gentle simmer. Now, for the magic that creates that ultra-creamy consistency: carefully use an immersion blender directly in the pot to puree the soup until it’s smooth and velvety. Alternatively, transfer the mixture in batches to a standard blender and process until smooth, then pour it back into the pot. This blending step not only ensures a creamy finish but also thoroughly breaks down the fennel seeds, infusing their full flavor throughout the soup.

-
Simmer Potatoes & Add Creaminess: Once the soup base is smooth, add the diced potatoes, light coconut milk, kosher salt, and freshly cracked black pepper. Stir well to combine. Bring the soup to a gentle boil, then immediately reduce the heat to medium-low. Let it simmer, uncovered, for about 15-20 minutes, or until the potatoes are fork-tender. Ensure the potatoes are fully cooked through, as this is key to a satisfying texture in your vegan Zuppa Toscana.
-
Incorporate Kale & Final Seasoning: Once the potatoes are perfectly tender, turn off the heat. Stir in the chopped lacinato kale until it softens and wilts into the hot soup, which typically takes just a couple of minutes. The residual heat from the soup is enough to cook the kale without overcooking it, keeping its vibrant color and nutrients intact. Taste the soup and adjust seasonings as needed, adding more salt, pepper, or a pinch of chili flakes if desired.

-
Serve & Enjoy: Your glorious vegan Zuppa Toscana soup is now ready to be savored! Ladle generous portions into bowls. Serve immediately, garnished with freshly cracked black pepper. It pairs beautifully with a warm, crusty bread for dipping, or a side of homemade garlic bread. For an extra touch, consider topping with our suggested additions like vegan parmesan, a dash of smoked paprika, or a swirl of homemade cashew cream. Enjoy this comforting, healthy, and utterly delicious plant-based meal!

Frequently Asked Questions About Vegan Zuppa Toscana
Here are some common questions and helpful answers to ensure your creamy vegan Zuppa Toscana turns out perfectly every time:
- Can I add vegan sausage to this recipe?
-
Absolutely! Adding vegan sausage is a fantastic way to enhance the hearty, savory profile of this Zuppa Toscana. We highly recommend using Italian-style vegan sausages or ground meat alternatives from brands like Impossible, Beyond Meat, or Field Roast, as their flavor profiles are well-suited for this soup.
To incorporate sausage, begin by adding your chosen vegan sausage to the pot before you start sautéing the onions. Break it up with a wooden spoon and brown it thoroughly for 7-8 minutes, stirring frequently, until it’s nicely cooked and slightly crispy. Remove the cooked sausage from the pan and set it aside. Then, proceed with cooking your onions and spices using any residual oils left in the pot from the sausage. Once the potatoes are tender and you’re ready to add the kale, stir the browned vegan sausage back into the soup to heat through.
- Does the soup taste like coconut?
-
When made with light coconut milk, the coconut flavor in this dairy-free Zuppa Toscana is very subtle and mostly contributes to the creamy texture rather than a dominant taste. The robust herbs and spices tend to balance it beautifully. However, if you are truly sensitive to or dislike coconut flavor, an excellent alternative is to use homemade cashew cream.
To make cashew cream, soak 3/4 cup of raw cashews in boiled water for at least 30 minutes (or ideally, overnight in cold water). Drain the cashews thoroughly, then blend them with 1.5 cups of fresh water until the mixture is completely smooth and creamy. Use this cashew cream in place of the 400ml can of light coconut milk specified in the recipe. This substitution ensures a rich, creamy consistency with a neutral flavor profile.
- Can this soup be made gluten-free?
-
Yes, absolutely! Making this plant-based Zuppa Toscana gluten-free is very straightforward. The recipe calls for all-purpose flour as a thickener, which can be easily swapped. To ensure a smooth and creamy gluten-free soup, use a 1:1 gluten-free flour blend that contains starches like arrowroot flour, potato starch, or tapioca starch. Popular brands like Bob’s Red Mill or King Arthur offer excellent gluten-free all-purpose flour blends that work well.
Alternatively, you can substitute 1 tablespoon of cornstarch for the flour. To use cornstarch, first mix it with a small amount of cold water (about 2-3 tablespoons) to create a smooth slurry before adding it to the simmering soup. This prevents lumps and ensures even thickening.
Storing & Reheating Your Vegan Zuppa Toscana
This one-pot vegan Zuppa Toscana is fantastic for meal prepping and tastes even better the next day as the flavors meld and deepen. Here’s how to properly store and reheat your leftovers:
- Cooling: Always allow the soup to cool down to room temperature for at least 30 minutes before transferring it to storage containers. This prevents condensation and helps maintain freshness and food safety.
- Refrigerator Storage: Store any leftover soup in an airtight container in the refrigerator for up to 4-5 days. It’s an excellent option for quick, healthy lunches or dinners throughout the week.
- Freezer Storage: For longer preservation, this dairy-free Zuppa Toscana freezes beautifully. Ladle individual portions into freezer-safe containers or bags, leaving a little headspace for expansion. It can be stored in the freezer for up to 3 months. Clearly label with the date for easy tracking.
- Thawing: If frozen, the best way to thaw the soup is to transfer it to the refrigerator overnight. This allows for a gradual and even thaw, preserving the soup’s texture.
- Reheating: Reheat the soup on the stovetop over medium-low heat, stirring occasionally, until it’s gently simmering and heated through to your desired temperature. Alternatively, individual portions can be reheated in the microwave, stirring halfway through. You’ll likely notice that the soup has thickened considerably after chilling or freezing; simply stir in a splash of vegetable broth or water until it reaches your preferred creamy consistency.

- 400 ml can light coconut milk
- 1 tsp kosher salt
- 1 tsp freshly cracked black pepper
- 2 cups lacinato kale, stems removed and chopped (75 g)
Instructions
- See notes if you’d like to add vegan sausage to this recipe. Otherwise, add the olive oil to a large soup pot with the onions, spices (red pepper flakes, fennel, thyme, oregano, paprika) and a pinch of salt and pepper. Sauté over medium heat for about 5 minutes until softened and fragrant, stirring often.
- Add the garlic and sauté for another 5 minutes, stirring frequently.
- Add the lemon juice to deglaze the pan, scraping any brown bits from the bottom of the pot back into the mixture.
- Sprinkle the mixture with the flour and cook for 1-2 minutes, stirring occasionally.
- Add the vegetable broth and either carefully use an immersion blender in the pot to puree, or transfer the soup to a blender to puree and then pour back into the pot. This step will help achieve the soup’s creaminess and fully release the fennel seed flavor.
- After blending, add the potatoes, coconut milk, salt, and pepper and bring to a gentle boil. Reduce the heat and simmer until the potatoes are tender, about 15-20 minutes.
- Once the potatoes are fork-tender, stir in the chopped kale and turn off the heat. Let sit for a couple of minutes to allow the kale to soften. If you prepared vegan sausage at the beginning, add that now as well.
- Serve immediately with fresh cracked black pepper and crusty bread for dipping.
Recipe Notes
- Let soup cool until no longer steaming before storing. Store in an airtight container in the fridge for 3 to 4 days. Can be frozen for up to 3 months. Thaw overnight in the fridge. Reheat stovetop or in the microwave until heated to your preference.
- To make this with cashew cream instead of coconut milk, soak 3/4 cup of raw cashews overnight, then blend with 1.5 cups of water and use that instead of the can of coconut milk.
- Feel free to add vegan sausage into this recipe, such as Field Roast Italian sausage. Cook it at the beginning, remove it from the pan before adding the onions and spices. Use the residual oils from the sausage to cook your onions. Then, add the sausages back into the soup when adding in your kale. You could also stir in some chickpeas or white beans at this point for an alternative to sausage.
