Creamy Avocado Cilantro Sauce: The Perfect Tostada Topping

This avocado sauce is a true culinary gem, a versatile condiment that you’ll want to keep on hand at all times. Whether you use it for dipping, as a vibrant spread, or to add a burst of fresh flavor to almost any dish, it never disappoints. While I usually eyeball the ingredients for this sauce, I’ve carefully measured it for you today to ensure perfect results. Don’t be afraid to adjust quantities to your liking; it’s incredibly forgiving and always comes out deliciously creamy and zesty!

Exploring Alternative Sauces for Your Tostadas

While our creamy avocado cilantro sauce is a fan favorite, the beauty of tostadas lies in their adaptability. If you’re looking to switch things up or just want to try something different, there are plenty of fantastic alternatives that pair wonderfully with the spiced lentils. Consider topping your tostadas with your favorite store-bought or homemade salsa for a classic touch. For a rich, cheesy experience, try a vegan queso sauce, which adds an incredible depth of flavor. Another excellent option is a zesty chimichurri sauce, offering a fresh, herbaceous kick. Any of these combinations will elevate your tostada game, giving you endless possibilities to customize your meal.

Craft Your Own Custom DIY Taco Seasoning

When it comes to seasoning the hearty lentils for your tostadas, while a store-bought fajita or taco seasoning mix can work in a pinch, I highly recommend making your own. Commercial seasoning blends are often loaded with excessive sodium and artificial ingredients. Crafting your own spice blend is incredibly simple, requires common pantry staples, and allows you to control the flavor profile and sodium content perfectly. My go-to mix features a balanced combination of chili powder, garlic powder, paprika, red pepper flakes, cumin, sea salt, and black pepper. This blend delivers a delightful warmth and a touch of spice. Feel free to adjust the amount of red pepper flakes to suit your preferred heat level, ensuring every bite is exactly to your taste.

Essential Tostada Tips for the Perfect Crunch

The secret to an outstanding tostada lies in its foundation: a perfectly crisp tortilla. Neglecting this crucial step can lead to disappointing, soggy results. To achieve that ideal crunch, begin by crisping your tortillas in the oven. Arrange them directly on the oven rack and broil until they turn golden brown and delightfully firm. This quick step ensures they can robustly hold up to the flavorful lentil mixture and all your favorite toppings. Once crisped, you can either assemble them immediately or place them on a baking tray, add your chosen ingredients, and return them to the oven for a final crisping and to warm everything through. Always keep a close eye on them during broiling to prevent burning.

For an exceptional tostada experience, the choice of tortilla matters. I’m particularly fond of tortillas from La Tortilla Factory; they are wonderfully thick, soft, and boast an incredible flavor. If you can find their green chile variety, grab them – they are simply divine! However, any good quality corn or wheat tortillas will work beautifully. If you’re not in the mood for traditional tostadas, remember that this versatile lentil filling is equally delicious when piled into crunchy taco shells or soft tortillas for scrumptious tacos or burritos.

Choosing the Right Lentils for Your Tostadas

Lentils are the plant-based stars of this dish, providing a hearty, protein-rich filling that is both nutritious and incredibly satisfying. For this recipe, you have a couple of excellent options: pre-cooked green or brown lentils, or conveniently canned lentils. My preferred choice for achieving the perfect texture and flavor in these tostadas is cooking green or brown lentils from scratch. To do this, simply bring 2 ¼ cups of water to a boil, add 1 cup of dried lentils, then reduce the heat to a gentle simmer. Cover the pot and cook for approximately 20 minutes, or until the lentils are tender yet still hold their shape. This method allows you to infuse them with flavor right from the start.

However, if time is of the essence, don’t hesitate to use drained and rinsed canned lentils. They are a fantastic shortcut that will still deliver a delicious meal. Just make sure to rinse them thoroughly to remove excess sodium and any canning liquid before adding them to your spice mixture.

Beyond Tostadas: Versatile Ways to Enjoy This Recipe

While this recipe is crafted specifically for delightful tostadas, its incredible versatility means you can easily adapt the ingredients to create a variety of other Mexican-inspired dishes. The spiced lentil filling and fresh toppings are fantastic in many forms. Instead of crisping tortillas flat, you can pile all the delicious components into crunchy taco shells for classic lentil tacos. For a softer, more substantial meal, wrap the filling and toppings in large, pliable flour tortillas to create satisfying vegan burritos. Simply load them up and fold them tightly. This recipe also works wonderfully as a deconstructed burrito bowl, served over rice or quinoa, or even as mini quesadillas for a fun appetizer. The possibilities are endless, allowing you to enjoy these vibrant flavors in whatever format you crave.

Creative Tostada Topping Ideas: Personalize Your Plate

One of the most exciting aspects of making tostadas is the freedom to customize them with an array of fresh and flavorful toppings. There are truly no strict rules, so let your creativity guide you! Here are some ideas to inspire your culinary creations and get you started on building your perfect tostada:

  • Black Beans or Refried Beans: Add an extra layer of protein and creaminess.
  • Shredded Lettuce: For a refreshing crunch and vibrant color.
  • Grated Carrot: Adds a hint of sweetness and an appealing texture.
  • Diced Red Onion and/or Green Onion: Provides a sharp, pungent bite and freshness.
  • Fresh Cilantro: An absolute must for that classic Mexican flavor.
  • Diced Bell Peppers: Offers sweetness and a pleasant crispness.
  • Vegan Cheese: Bake lightly to allow it to melt into gooey perfection – YUM!
  • Nutritional Yeast: For a cheesy, umami boost without the dairy.
  • Diced Avocado: Adds healthy fats and a creamy texture, complementing the sauce.
  • Vegan Sour Cream: A cool, tangy counterpoint to the spicy lentils.
  • Salsa: Whether mild, medium, or hot, salsa is a classic choice.
  • Shredded Red or Green Cabbage: Create a quick, vibrant slaw by tossing shredded cabbage with a splash of vinegar and a pinch of sugar – this is what I used in the photos, and it was fantastic!

Mix and match these toppings to discover your favorite combinations and make each tostada uniquely yours.

Ingredients

For the Avocado Cilantro Sauce

  • 1 ripe avocado
  • 1 cup lightly packed cilantro (35 g)
  • 2 tbsp lime juice
  • 1/3 cup water
  • 1/2 tsp sea salt
  • Optional: 1/2 a jalapeno, de-seeded

For the Lentils

  • 2 cups cooked green lentils, or approximately 2 (15 oz) cans
  • 1 tsp black pepper
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/2 red pepper flakes, optional
  • 1/3 cup water or vegetable broth

For the Tostadas and Toppings

  • Tortillas (use corn tortillas for gluten-free; otherwise, any kind works)
  • Refried beans, about 2 tbsp per tortilla
  • 1 red pepper, diced
  • Chopped cilantro
  • Shredded red cabbage
  • Additional toppings (see ideas above)

Instructions

  1. Preheat oven to 325°F (160°C). Place 6 tortillas directly on the oven rack and bake until they are brown and crispy. This will happen quickly, so keep a close eye on them to prevent burning. Once crisp, remove from the oven and place on a baking sheet to prepare for toppings (or simply plate them, as a final oven crisp is optional).
  2. In a pan, combine the cooked lentils with all the spices and broth (or water). Cook for about 10 minutes, stirring occasionally. Use the back of a spoon to mash some of the lentils until the mixture takes on a slightly refried bean-like texture. Add more water or broth if the mixture starts to dry out.
  3. While the lentils are cooking, prepare all your desired tostada toppings (dice vegetables, shred cabbage, etc.).
  4. Once the tortillas are crispy, spread a layer of refried beans over each one.
  5. Add a generous scoop of the spiced lentil mixture to each prepared tortilla.
  6. Top with your desired fresh toppings, such as grated carrots, diced bell peppers, fresh cilantro, nutritional yeast, and green onion.
  7. Optional step: For an extra crisp and to ensure all toppings are warmed through, place the assembled tostadas back in the oven on broil for 5-10 minutes. Watch them carefully to prevent burning; they should be beautifully crispy and thoroughly heated.
  8. Remove from the oven (if applicable) and generously drizzle or spread with the avocado cilantro sauce before serving immediately.

Notes

This recipe yields approximately 6-8 tostadas, depending on how much lentil filling you add to each. Adjust the quantity of topping ingredients based on the number of tostadas you are preparing.

These versatile lentils and toppings can also be served in crunchy taco shells or rolled up into delicious burritos.
