Essential Ingredients for an Unforgettable Fiesta Salad
The beauty of a fiesta salad lies in its endless possibilities for customization. While we’ve provided a specific recipe below, consider these key ingredients as a flexible guide to build your ultimate bowl of goodness. Each component contributes to the vibrant taste and satisfying texture of this plant-based masterpiece.
- Quinoa or Your Preferred Whole Grain: Quinoa takes center stage in this recipe, offering a complete protein and a delightful texture. However, feel free to swap it for brown rice, farro, or even a mix of grains if you prefer. Once your quinoa is perfectly cooked, infuse it with classic taco flavors by mixing in fresh lime juice, chopped cilantro, and a blend of chili powder, paprika, garlic powder, and a generous pinch of sea salt. For a lighter, carb-conscious option, you can even skip the grain entirely and focus on a robust green salad base.
- Nutrient-Rich Black Beans: A staple in any fiesta-inspired dish, black beans are an excellent source of plant-based protein and dietary fiber. You can use ready-to-eat canned black beans, simply drained and rinsed. For an extra layer of flavor, consider simmering canned beans briefly with garlic, onion, and a touch of cumin and chili powder. Alternatively, cook your own dried black beans from scratch, seasoning them generously to mimic that authentic burrito flavor. Chickpeas or lentils also make fantastic, equally nutritious alternatives.
- Sweet and Crunchy Corn: Corn adds a wonderful sweetness and crisp texture to the salad. You can use fresh corn cut from the cob, or opt for the convenience of canned or frozen kernels. To elevate its flavor profile, especially if using frozen corn, lightly broil it with a sprinkle of salt, pepper, and chili powder until it develops a slight char. This optional step adds a delicious smoky depth that truly enhances the salad.
- Creamy Avocado: Given the rich and creamy chipotle dressing, we’ve opted for simple diced avocado in this recipe. Avocado contributes healthy monounsaturated fats and a luxurious smoothness that perfectly balances the other ingredients. If you’re an avocado enthusiast, a quick homemade guacamole would also be a fantastic addition, offering an extra burst of flavor and a thicker texture.
- Fresh Tomatoes or Zesty Pico de Gallo: For a burst of freshness and color, fresh diced tomatoes are used here. However, both store-bought or homemade salsa, or a vibrant, quick pico de gallo (a fresh blend of chopped tomatoes, onions, cilantro, and lime juice) are superb choices that add a bright, tangy element to the salad.
- Colorful Bell Peppers and Onions: This recipe utilizes diced red and orange bell peppers, along with chopped green onions, for their crispness and mild flavor. Feel free to use any color of bell pepper – red, yellow, orange, or green – and either red or white onion. For an enhanced savory kick, sautéing the vegetables with taco spices such as paprika, chili powder, cumin, and garlic powder before adding them to the salad will deepen their flavor.
- Crisp Shredded Lettuce: Shredded lettuce, particularly romaine, provides a refreshing crunch and adds significant volume to the salad, making it feel more substantial. For an added nutritional boost, consider using darker leafy greens like spinach or kale, which are packed with vitamins and minerals, and lend a slightly different, earthy flavor.
- Hearty Tempeh or Plant-Based Protein: Cubed tempeh is incorporated into this salad for its unique texture, savory flavor, and excellent protein content, making the salad incredibly satisfying. Tempeh is a fermented soybean product known for its firm bite and ability to absorb flavors. Other fantastic plant-based protein options include perfectly baked tofu, dry-fried spiced tofu, or even a flavorful lentil taco “meat”, offering diverse textures and nutritional profiles.
- The Signature Cashew Chipotle Sauce: The heart of this fiesta salad is undoubtedly the simple yet incredibly flavorful chipotle sauce. Made with raw cashews and fiery chipotle peppers in adobo sauce, it delivers a creamy, smoky, and spicy punch that ties all the ingredients together. This sauce is a personal favorite for its ability to transform any dish into a flavor fiesta. While this chipotle dressing is truly outstanding, you could also explore other options like a bright avocado lime sauce, a light vinaigrette, or even more adventurous choices such as chimmichurri or tomatillo sauce.
- Crunchy Crushed Corn Chips: For that irresistible crunch and authentic taco salad experience, crushed corn chips are a must. You can use your favorite store-bought variety or easily make your own homemade chips. Simply slice fresh corn tortillas into strips, bake them until perfectly crispy, and then crumble them over your assembled salad just before serving.
- Optional Extra Toppings: To truly elevate your fiesta salad, consider adding a scoop of cooling vegan sour cream or a sprinkle of grated vegan cheese for extra richness. Pickled jalapeños can add an extra kick, while a scattering of fresh herbs like extra cilantro or a pinch of chopped scallions can brighten the flavors further.

Ingredients
For the Cilantro Chili Lime Quinoa (makes 4 salads)
- 3 cups cooked quinoa, (from 1 cup uncooked)
- big handful of chopped fresh cilantro
- squeeze of fresh lime juice
- 1 tsp each chili powder, paprika and garlic powder
- generous pinch of sea salt
For the Cashew Chipotle Sauce (makes 4-6 salads)
- 2/3 cup raw cashews
- 3/4 cup water
- 3 cloves garlic
- 3 chipotle peppers in adobo plus 2 tsp of the adobo sauce
- 1 tbsp lemon juice
- 1 tsp cumin
- 1 tsp sea salt
- 2 tsp pure maple syrup
For the Fiesta Salad (per serving)
- diced avocado
- diced fresh tomato
- handful of shredded romaine lettuce
- black beans
- corn kernels
- crushed tortilla chips, see notes for homemade option
- chopped fresh cilantro
- cubed tempeh, see notes for preparation
- diced bell peppers, any color
- diced red or white onion, or chopped green onion
Instructions
-
Cook the Quinoa. Cook the quinoa according to package instructions. Typically, 1 cup dry quinoa yields approximately 3 cups cooked, which is enough for 4 generous salad servings. Once cooked, transfer to a bowl and mix with the chopped cilantro, a generous squeeze of fresh lime juice, chili powder, garlic powder, paprika, and sea salt. Stir well to combine all the taco-inspired flavors.
-
Prepare the Chipotle Sauce. Combine all the sauce ingredients (raw cashews, water, garlic, chipotle peppers in adobo and their sauce, lemon juice, cumin, sea salt, and maple syrup) in a high-speed blender. Blend until the mixture is completely smooth and creamy, ensuring no cashew chunks remain. Adjust seasoning to taste.
-
Assemble Your Fiesta Salad. To build your delicious fiesta salad, start with a base of fresh shredded romaine lettuce in a large bowl. Artfully arrange the remaining ingredients over the lettuce: about 3/4 cup of the prepared cilantro chili lime quinoa, a portion of black beans, corn kernels, diced avocado, fresh tomato, bell peppers, and onions. Top with the prepared cubed tempeh and a sprinkling of chopped fresh cilantro. Drizzle generously with the creamy cashew chipotle sauce, and finally, garnish with crushed tortilla chips for that essential crunch. Serve immediately and enjoy!
Notes
- Homemade Tortilla Chips: To make your own crispy tortilla chips, take a corn (or wheat) tortilla and slice it into thin strips. Arrange them in a single layer on a baking sheet. Bake in a preheated oven at 350°F (175°C) for about 8-12 minutes, or until they are golden brown and perfectly crispy. Keep a close eye on them to prevent burning. Once cooled slightly, gently crumble them over your salad for a fresh, homemade crunch.
- Preparing the Tempeh: For the tempeh, cut a block into uniform cubes. You can either pan-fry it or bake it. To pan-fry, cook the tempeh cubes over medium heat in a non-stick pan with a tiny bit of oil (or water/broth for oil-free) until they start to brown and crisp on all sides. Alternatively, bake the tempeh by arranging the cubes on a parchment-lined baking sheet and baking at 350°F (175°C) for approximately 15-20 minutes, or until nicely browned and slightly firm. If using plain tempeh, enhance its flavor after heating by tossing it with a blend of garlic powder, chili powder, sea salt, black pepper, and paprika.
- Sauce Yield: The cashew chipotle sauce recipe provides enough dressing for 4-6 large salads, depending on how generously you like to dress your meal. Feel free to adjust the quantities of the other salad ingredients to match the number of servings you’re preparing. The sauce can be stored in an airtight container in the refrigerator for up to 5 days.
- Meal Prep Tips: For convenient meal prep, cook the quinoa and prepare the chipotle sauce ahead of time. You can also chop all your vegetables and store them in separate containers. When ready to eat, simply assemble your bowl with fresh greens and the prepped ingredients, drizzle with sauce, and enjoy a quick, healthy meal.
- Flavor Variations: Don’t hesitate to experiment with different spices for your quinoa or beans. Smoked paprika can add an extra layer of depth, while a pinch of cayenne pepper in the sauce can increase the heat. A squeeze of orange juice in the dressing can also add a subtle sweetness and tang.
